  1. I have been gluten-free for over a year, but I've just started baking gluten-free stuff at home. It's embarrassing, but I've had some super-duper stinky gas a couple of times in the past month... since I've been baking things with gluten-free all purpose flour and using xanthan gum. I'm thinking it's the xanthan gum. Does it make anyone else stink? Or maybe...
  2. Thank you so much for all of the links! What a tremendous help!
  3. I'm looking for something to give our child's teachers to (quickly) educate them on gluten intolerance. Anyone? A whole book would be too much to ask them to read. One or two pages would be great. It might help them to know why it's so important for my child to avoid gluten (not just a "little diarrhea") and where they migh not have thought gluten exists...
  4. After reading of so many people referring to taking a gluten challenge, I thought it would be easy to Google "gluten challenge" and find a the definition of a gluten challenge. I figured that it would always be the same thing- like a regular gluten challenge would be to go gluten free for a specific amount of time, and then eat a set amount of gluten for...
  5. We recently went gluten free for our 15 month old. By day 3 she was pooping less. By day 5 she was sleeping through the night. After a few days more her poops are normal smelling. I think it helpd that we cut out the oatmeal she was eating in the morning. They were probably cross-contaminated with gluten. We're all happier now. Good luck to you- hope...
  6. To get more fat into your diet, you can add nuts- in smoothies, on crackers (gluten free of course), and wherever else you can think of. My baby and I eat porridge for breakfast every day and I grind up pecans and cashews in a coffee grinder and mix the nut powder in there. Flax seeds work well too and they are tasty. The depression and fatigue could also...
  7. Clearly, in on this form it doesn't mean carbon copied. I've seen that other folks need a cheat sheet, too. Please help. Thanks
  8. When I want my daughter to eat something healthy that she's not crazy about: I wait until she is hungry (she tells me) then I sit down with her and a plate of whatever it is. I make sure that we both eat it and that no other food is in sight. If I have to spoon feed it to her (she's still not great with a spoon) I read to her while she eats. She loves having...
  9. Very interesting- I've never heard of gluten-free wheat products. I'll do some looking around. In the meanwhile, can you suggest a wheat product that you like where the gluten has been removed? I'd like to try it. Thanks!
  10. I know this info must be out there somewhere, but I am having a hard time pinning it down. Ifanyone has any good links- please let me know. Thanks
  11. Sorry, I'm new here and I tacked this post (see below) onto another person's post that seems to have been resolved. So here we go in a new topic: I also just received results to my blood tests and they were negative (no specifics yet, should be in the mail, will get them soon). So- to get this straight- you CAN have negative results but have Celiac...
  12. I also just received results to my blood tests and they were negative (no specifics yet, should be in the mail, will get them soon). So- to get this straight- you CAN have negative results but have Celiac Disease? So confused and frustrated. I'm looking for an actual diagnosis because I don't have straightforward symptoms and I have only been gluten...
