  1. I've never made gumbo but I dip my chicken in corn flour (not cornmeal or corn starch) and it makes a lovely crust. It has some thickening power, but I use either corn starch or sweet (glutinous)rice flour to thicken my sauces and gravies.   3. Thanks for the confirmation. I don't have an actual diagnosis. My blood tests were negative, but I had already been eating gluten free at the time. My brother is celiac and I was diagnosed with IBS at 8 (I'm 45). My doctor's advise was "if it makes you sick, don't eat it" which I had already decided. I still sometimes wonder if I'm not just a hypochondriac...
  4. I have been gluten free for almost 10 months. I have had a few accidents and mainly notice bloating, C, and brain fog. I have always had sensitive skin, itchy with little or no eczema type rash, just something that is more a bother than anything. I know that I was glutened two nights ago and noticed that the next day I itched from head to toe - no rash...
  5. Although I'm apparently not celiac (per my bloodtests) my experience in eating gluten-free is very positive so I will continue with it. My Dr said "if it makes you sick don't eat it!".   6. I eat alot of rice crackers and the Rice Thins are by far my favorite - particularily the whole grain ones (don't worry they are gluten free) I find these thinner and crisper than most types.

    I recently ate at Tony Roma's for the first time since going gluten-free. I had riblings, baked potato and veggies and felt totally fine after too. I loooove riblings!

  9. I love cardamom (as did my mom, she used it in alot of baking). I use it as I would cinnamon or ginger (ie sweet spices) I love it in custards and rice pudding. I drink ginger tea, I wonder what a sprinkle of ground cardamom would add. mmmmm think I'll have to try it.
