  1. If you are living with pain please give up dairy - who really needs it anyway???? also, other foods that you might not be able to tolerate. I have also been checking into the lectin and think everyone should check it out. I have been "allergic" for many years to a lot of the lectin foods, including white potatoes which gives me major pains in the heart...
  2. Judy, I feel for you making all these changes all the while not at the best yourself. I also think you should be tested for celiac. I like Enterolab.com because they test for the gluten intolerant gene DQ1, which I think is really awful to have - i have two of them, a grandson has two, & a granddaugher and my sister now have their tests at enterolab...

If maltodextrin is in food that was made in the the United States it is okay, made out of corn or something - not sure, if it is in Medicine, you need to check the source, it might be okay or it might not be okay. It could be the dairy in the chocolate, and yes, some people do react to chocolate, also it could be the cross contamination from the bars themselves or the wrappers - did someone with wheaty hands give it to him & then he touches the wrapper & then the candy bar?     eggs sometimes make me nauceous also some of the gluten free flours do the same thing, if you are eating any gluten free crackers, breads that is probably your problem... try Lundberg Rice Chips and Rice cakes

  17. I offer my appreciation for someone cooking two meals, that is so hard to do. Most of us that are celaic just feed our food to eveyone. At the office I had a chocolate cake & I told the guys that I was not sure they would want any that it was gluten free. they said "it is chocolate cake, what is not to like!!" I had to hide the last piece for myself...

  19. icanary, whether you think you need to attend as a networking social is a decision that only you would know. I think there would be a lot of variables, such as how necessary you think it is, if you want to socialize, if you think it would help your job position, or if you just do whatever it is you want to do & move on, whether it is distancing yourself...
  20. I just made a pumpkin pudding (same thing as a pie except no crust) & used coconut milk in place of the canned milk - it was delicious & set up perfectly. I got the recipe from the "Super foods" book by Steven Pratt M.D. & Kathy Matthews. But any pumpkin pie recipe should work... I have a completely gluten-free house & no wheat things...

If you are converting a wheat recipe you should up the amount of baking powder or baking soda, from 1/2 to double the amount called for in the recipe. cookies are easy, have you checked out the recipe thread? Do you have a gluten free cookbook? Also, banana bread is very easy to convert to gluten-free, it is almost fool proof. Good Luck

  24. well you do not have to worry about it for it to make you sick. Those of you that are not super sensitive will probably not understand or believe it . It is only those of us that can walk past a bakery & get sick on the fumes, that really get it. & believe me it is really an awful way to be. It is about like the peanut allergy, some react worse...
  25. Noel, I see that you have come to the realization that there is something else that might be making you sick. I will just put in my two cents which is the same thing that I always say. Give up dairy & for a time quit eating any grains, yes all those gluten-free breads & crackers etc. I recommend the book "Superfoods" by Steven Pratt, M.D...
