ARCHIVED Constantly Paying For Food I Can't Eat
daffadilly replied to Mango04's topic in Coping with Celiac Disease
I can relate to paying for food that you cannot eat, it just somehow seems not right. Yes, even on vacation it is terrible to pay for a lunch you cannot eat, but they have a mindset... Now if you vacation in Belize, on any of the day trips inland or out to sea, you can just request a fresh lobster be packed for your lunch, that is what I used to do. ... -
ARCHIVED Do I Sound Glutened To You?
daffadilly replied to Mtndog's topic in Coping with Celiac Disease
Did you test for airborne mold in the apartment? If it was an old building or had plumbing leaks or roof leaks in the past, it could be mold that was airborne. I had it in my house & had half the back of the house torn out & replaced. & believe me the insurance company would not have paid for it, if the mold was not bad and in fact airborne... -

Queen Serenity, thank you for the only smile that I have had today (due to the recent tragic death of a young person in my family, but I digress from the thread content). It just seemed that your name fit your post!!! Getting all your subjects in the proper form. Although not all of us presume to not so much give advice but to offer support, our opinions... -
I would just like to second the mention of baked sweet potatoes. very nutritious, sweet & good & easy to eat & cook. Take two or more sweet potatoes, wash, poke with a fork a couple of times, put in a glass casserole dish & cover with glass lid, pop in microwave, cook for about 6 minutes (depending on size of potatoes) take out dish &...

there are other boards that only have one moderator and they delete anything that they do not like, so if that type of environment suits one better, they are available. -
ARCHIVED I Finally Did It--my Own Personal Gluten Challenge
daffadilly replied to chewymom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It is common for people with compromised immune systems (us) to get giardhia. Also it is common to blow off the test results from Enterolab, when you do not want to change your lifestyle. that is what my son & daughter in law did with my grandson. when they found out that he had "only" two DQ1 genes for gluten intolerance, not celiac disease. Which... -

ARCHIVED Please Support Each Other, Not Start Wars
daffadilly replied to Queen Serenity's topic in Coping with Celiac Disease
Hi Vicky, well we have discussions to air our opinions and the things that we have experienced which may not match the experience of others. Discussion in words is good because it airs all types of views & educates one on what views are out there in the world. That does not mean that we would not offer support to that person if they needed it, regardless... -
Oddly I do not get gassy from the beans that I eat, but soy gives me gas, just the 3 Tablespoons of soy sauce in a stir fry is enough to make me uncomfortable. I avoid most forms of soy. Another good tool to use for food intolerances is the book "eat right for your blood type". well except they talk about eating wheat etc, I just disregarded that part...

Hi Mara, & welcome you will soon get the hang of eating gluten-free, it is a little hard at first. I second the suggestion to ditch the diet sodas - the artificial sweetner and all the other junk in them are jsut not good for you. also, do not forget to clean the gluten out of your kitchen, maybe that info is in the newbie packet. Hope you are...

daffadilly replied to chgomom's topic in Coping with Celiac Disease
I do not use the george foreman grill but I have seen them at my kids house, I think they are non stick porous stuff, IMO you are getting cross contaminated from it. washing will not get rid of all the gluten. Also, I do not think zucchini are the things to eat on an upset tummy, sorry, guess you now know Like someone said go back to the basic... -

Sharon, sorry you are having troubles, & so sorry that you got such stupid advice as to eat gluten. Of course you have to go gluten free immediately. I also second someone's comment on the nutrasweet AND ALL artificial sweetners - get that stuff out of your diet immediately. Throw your toothpaste away - has artificial sweetner in them all, & use... -
ARCHIVED Frustrated That Nothing Is Working
daffadilly replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Ursula sorry you have a problem with rice. Hang it there it could change in the future, or have you had a problem with it your whole life? I can eat rice, but I wash it in three rinse waters first before cooking it. Kathy Ann, I hope you do give up the grains, at least until you are all healthy & energetic, then you can add them back one by one... -
ARCHIVED Major Depression

He should be taking B12, and or getting the B12 shots. He probably has DQ1 genes, they are associated with depression and other neurological problems. -
ARCHIVED Frustrated That Nothing Is Working
daffadilly replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Kathy, welcome this is a great board. I have some suggestions, some are repeats of what others have said. Take B12, everyday for the rest of your life. Check your vitamins and meds & make sure they are all gluten free. & I would maybe even suggest cutting some of the out for a bit to see how you do, if you are not anemic, the iron pills... -
Ursula, You have endured years of abuse, you are in better shape than most of us would be after that type of treatment. I for one cannot even see any faults in myself , much less list any. I will enlighten you a little and tell you that for every thing that you see as a fault is also an asset. A spotless neatnik does not take the time to ..... (fill...

ARCHIVED Chocolate Sour Cream Bundt Cake
daffadilly posted a topic in Gluten-Free Recipes & Cooking Tips
I saw this on America's Test Kitchen today, it only uses 1 1/2 cups of flour. I have not made it because I cannot do dairy, or I would be mixing it up now!!! But with 2 cups of brown sugar a stick & a half of butter, sour cream, a Tablespoon of vanilla extract & 5 eggs there is no way that this would not be a fabulous gluten-free cake. They said... -
Ursula, it sounds like you are formatting a plan. taking the class will be a good thing for you. Make the most of meeting people and making contacts while you are there. the not telling anyone advice from the pastor is sick, sick, sick. I do urge you to contact the nearest women's shelter for advice & help. Your husband's control of the money...

ARCHIVED A Question About Enterolab
daffadilly replied to IMResident's topic in Coping with Celiac Disease
Carla are you taking B12? Mike you have such great posts!!! Thank You I can see with IMR...'s thinking how the medical profession is unable to do anything but push pills. I wonder what wonderful trip those anti-depressant pill manufacturers take them on? Oh, sorry, I forgot they do not go on trips, they are inconvenienced & have to travel... -
ARCHIVED A Question About Enterolab
daffadilly replied to IMResident's topic in Coping with Celiac Disease
Hi Sagemoon, I have the other Soy sauce but we all prefer the Kroger brand. Thanks for the sympathy on the grand kids!! I just heard from the d-i-l yesterday that my son (the one that keeps his head stuck in the sand) has now found some new chips that he bought, Michael's brand (I have not tried them yet), they just happen to say on the package gluten free... -
