Tonight's Soup is Teen choice night. My girl is a soup addict. We are having it with a side of sliced avocados, tomatoes, jalapenos, and black olives. If you have grain eaters in your home, you can serve it with a bag of good tortilla chips.

  • 2 cans beef broth
  • 8oz. Cream cheese, softened
  • 8oz. cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 1 medium onion, finely diced
  • 1 small can mild green chiles
  • 1 TBSP chili powder
  • 1 tsp cumin powder
  • 2 tsp garlic powder
  • Salt to taste

Brown ground beef, drain, and add to soup pot. Add beef broth to beef in soup pot, and turn on heat to medium. Saute onion in skillet until translucent, add to soup mixture. Add softened cream cheese to soup mixture and whisk until incorporated (until any traces of white are gone). Add remainder of ingredients and simmer for 15-20 minutes.

 

Smooshy Applesauce

  • 5 McIntosh apples, peeled, quartered, cored and chopped
  • 2 teaspoons fresh lemon juice
  • 1 cup apple cider (eyeball it)
  • 3 rounded tablespoons honey (brown sugar for non primal)
  • 1 1-inch piece of fresh ginger root, peeled
  • 1/2 teaspoon ground cinnamon
  • butter
  • cream cheese

Pre-heat a medium size saucepan over medium-high heat. Add the apples, lemon juice, cider, honey OR brown sugar, ginger and cinnamon and stir. Cook, stirring frequently, until mushy, about 15 minutes. Remove the ginger. Serves hot in small bowls with a pat of butter an some cream cheese.
