PECAN GLUTEN FREE BUTTER TART SQUARES

Celiac.com Sponsor (A13):
2 Cups King Arthur Flour (or other gluten free flour that you prefer)

1 Cup of sugar

1 Cup margarine, or butter, softened

1 1/2 Cups of seedless raisins

1 Cup dried currants

2 Cups of boiling water, cooled a little

4 eggs lightly beaten

2 Cups lightly packed brown sugar

1 tsp. vanilla

1 tsp. Xanthum Gum

Mix well, pat into prepared pan. You can sift some icing sugar, but

it is sweet enough

If you are fond of mincemeat you can substitute mincemeat and delete the pecans and currants

Cook until lightly browned and pulling from edges of the pan. Don't overcook or you will have a very hard crust
