Jr Won't Eat Yellow Cake Again, Haha

Today, I did finally get to the Organic Market and found the product name I was looking for. I wish I did not have my son along with me, (he's just 4) as I could not look around as well I as I wanted too. :rolleyes: The store did have quite a number of gluten free items to look at. I got an all purpose celiac flour mix, as well as the tapioca flour, gluten-free baking powder, gluten free Oats, sweet rice flour, guar gum and a gluten-free yellow cake mix. Later in the evening when I made my bread, jr saw the yellow cake mix, and hounded me all evening about making yellow cake. Its one of his favs. So I decided ok, I'll make it. Anyhow I could tell when it finally done and he had his cupcake, that the satisification was not quite there. It was not like his regular yellow cupcakes. I don't think he'll be asking for them again anytime soon. LOL. :lol: They were ok, as far as gluten free baking items. But, there was still that tad of grainy taste about them.

Now I just need to figure out if I can make something discent with it, all of these flour mixtures. I tried adding in tapiaco to the bread mix I all ready had, replace half of cup with the tapiaco and sifted them all together. But, the bread turned out the same as before. I have still not figured out how to make it as well (or even close) to the one I buy ( gluten-free bread loaf) So I guess I'm back to buying the loaves again, at 7$ each, till I can figure out how to make a more bareable loaf of bread.
