So whenever I have gluten, I get the "normal" reaction of an extremely distended stomach, dizzyness, mind fog, and some other unpleasantness, but the weirdest symptom is my fingers, face, and pretty much everything swell up. I called in sick to work one day, but had to go in later to pick up my phone...no one even recognized me because I was so swollen all... -
Hey! I've made teryaki a couple of times and the way that I do it is I boil about equal parts gluten-free tamari and pinapple juice. Then, when it's boiling, I add some cornstarch mixed with water (a slurry). It thickens up right away and then you can add sugar to taste. I love it and, best of all, it doesn't make me sick. I've noticed that when I'm glutened I crave things that I don't really crave normally like really sugary, high-fat, well, junk foods. This stuff really isn't part of my normal diet, but no matter how sick I feel when I'm glutened I still crave it. Is it because my body is just trying to find something that's easy to absorb? -

Thank you so much for the support. I really can't tell you how much it helps to just have someone understand what I'm going through right now. It just seems that I'm stuck in a catch-22. I'm under a huge amount of stress right now since school is coming to an end and I have tests, projects, work, etc. This is the time where I need to be healthy the most and I just seem to be getting sick more and more often. Can the amount of stress you're under really make everything worse?

I have only been on the gluten-free diet for about a week and a half now and all and all I feel so much better...depression has subsided, sleep is becoming normal, more energy, etc. But yesterday I had another "episode" of a huge distended stomach and all I ate were gluten-free foods.
