  1. Wow, I didn't know that. I have looked at the label that says contains wheat, but could not find any questionable ingredients on the label. I really appreciate the replies. Gives me some options I haven't thought of!
  2. I am trying to eat more whole, unprocessed foods and am having a horrible time with raw veggies -- very very painful trapped gas that lasts for hours or days. I'm aware that Beano has gluten, Gas-X does absolutely nothing for me and I'm running out of ideas for how to relieve the discomfort. Anyone here have any tips? I have an appointment for a checkup on Monday and am going to ask the dr. for a prescription. Any help? I should add that I have no problem with beans, lentils, lettuce, or other foods -- just raw veggies.

  4. Hi - my 7 year old son and I both have type 1 diabetes as well! Except it's my son who has celiac. I have Hashimoto's and my son has Grave's. I found your profile by accident when I was searching for info on carb-counting gluten free bread. I am finding it pretty difficult. My son and I are both on a pump and use a scale for weighing our food.

  5. I also had a negative blood test and a negative biopsy. However, the gluten-free diet CURED me of years of pain. Since I have a strong family history of celiac (mom and sister have it) and I also have type 1 diabetes and Hashimoto's thyroid, my current doctors all agree that I probably have celiac. The biopsy was done very early on and I just don't think I had enough damage to show up yet. The damage can be very spotty and missed on a biopsy if there isn't enough damage. I have also known more than one person that had a negative blood test and a POSTIVE biopsy, so yes, the blood tests are not always accurate. Good luck in your journey.
  6. We have been to Daluciano's several times now and it is incredible!!! Here's their gluten free menu By the way, you NEED reservations there!!! It is a tiny tiny restaurant, maybe would hold 50 people!! They also made a special order birthday cake for my sister -- it was by far the best cake I have EVER had -- with Canneloni filling, buttercream icing, 4 layer cake. Unbelievable!!! And thanks for the tip on Rose's bakery, I didn't know it was there!! We just moved to Libertyville last fall, I'm going to have to make a trip to Evanston soon!
  7. This is a fascinating thread to me since my mom, myself and my 7 year old son all have type 1 diabetes. My mom, sister and I all have celiac. Son does not yet. I was diagnosed with type 1 diabetes within 3 months of going gluten free. So, good question, which came first, the diabetes or celiac? For my specific situation, I knew I was at extremely high risk for type 1 diabetes (I was in a research study and monitored very closely for 3 years.) I think that by going gluten-free, my intestines healed enough to absorb the carbs I was eating, and at the same time my autoimmune system completely malfunctioned!! I am particularly interested in food eaten in Biblical times and also interested in the research regarding cow's milk versus goat's and sheep's milk. Does anyone have any books/resources to recommend? I would love to do research more about the old testament laws about food as well as other biblical "nutrition" issues (including the new testament) and compare that to where we have evolved today. It looks like some others here have researched more than I have and I'd love your recommendations.

  9. My 7 year old son and I both have type 1 Diabetes, and I have celiac as well, so I often make gluten-free foods that the whole family eats. My favorite tool in the world is the Salter 1450 Nutriweigh Scale. You weigh your foods, type it in the scale, and out pops the nutritional information for over 1400 foods. You can also add your own foods and recipies. I have found that the scale is pretty accurate even for gluten free foods. Yes, gluten-free foods have more carbs, but they also WEIGH more, so the scale is perfect for that. Recently I made a gluten-free cake and weighed it on the scale and typed in "Yellow cake w/frosting" I gave insulin based on the carbs that showed up and blood sugar numbers were quite good afterwards.   10. I have seen Walmart powdered sugar with wheat starch instead of corn starch. That was about a year ago then I quit buying it because of that, so they may have changed it by now...
  11. A carb factor is the percentage in weight (in grams) of a food that contains carbs. For example, a banana's carb factor is 0.20. If the weight of a banana is 100 grams you multiply it by .2 and get 20 grams of carbs. This is a very very accurate weigh to measure how many carbs are in a food and is very widely used in the diabetic community (because we dose insulin based on how many carbs we eat) and by the USDA Food Nutrition Database. The salter scale has built in carb factors that are provided by the USDA food database. So I can type in to the scale "yellow cake with frosting" then weigh the cake and it will give me a very accurate carb count. Rice flour has more carbs than white flour, but it also weighs more -- so I'm thinking that if I weigh it on my scale it will be close to correct. But really I'm looking for a specific carb factor....
  12. My son and I are both type 1 diabetic and I have made a gluten-free Pantry cake mix w/chocolate frosting. Does anyone know if there is a different carb factor for gluten-free Cake versus a nonGF cake. I have a salter scale and can weigh the cake out and it will give me the carbs if it is a nonGF cake. But I'm wondering if gluten-free cake has a different carb factor. This is more of a diabetic question, but my diabetes forum will probably not know about carb factors specifically for gluten-free cake. THANKS!!

  14. I just moved from Michigan to the north suburbs of Chicago. And you have got to go to The Gluten Free Store in Northbrook (807 Waukegan Road, Northbrook, IL) Every single item in the store is gluten free. It looks like a hole in the wall type of place from the outside, but it's awesome!! I love being able to sample cookies there without having to read the ingredients!! Their prices are average health food store prices, but they have over 800 gluten free products that you could never find anywhere else.
