About Me

I was diagnosed with Celiac as a baby after becoming severely ill at age 11 months. I was placed on the Specific Carbohydrate Diet for 2 years and was then gradually reintroduced to starchy foods, including wheat. I ate normally for my entire life until developing all the classic symptoms of celiac at age 56.
