I'm new to this too. Diagnosed and gluten free in early July. Everyone has different recovery times. I've heard everything from 3 months to 2 years. What I can tell you is after only two weeks, you're still on the roller coaster.

1) Can anyone point me to a study/paper that talks about casein intolerance and damage to intestinal villi? I think that's it as well. During my diagnosis process I had an MRI (as well as a small bowel series and a colonscopy w/biopsy in addition to the camera work and biopsy from the mouth end). When did the 'stayed well' phase start for you? I know everyone is different, but it's a question I like to ask. This thread makes me sad on many levels... This was a good book. I'd recommend it. I learned a lot of good info from it. To discount it because of the biopsy portion is a bit short-sighted. My doctor can't know everything...but neither can I. We are both responsible for my continued good health. -

Montreal Seasoning is a blend not a brand. It should be possible to make it gluten free, but it would really depend on the manufacturer. I use a blend from McCormick. A plan to use-up my Kingsford. I prefer lump charcoal and lump wood and this will be a nice excuse to spend the extra buck. Mostly I don't want to bother cleaning my grill of all traces of the previous charcoal. That would appear a bit neurotic.
