A New Diagnosis
I was diagnosed with Celiacs disease about a month ago and its amazing to me what a huge change this is. No more just grabbing any kind of food to eat. It has been a struggle and I need all the help and support that I can get. Im married but I dont have any kids. My husband is very supportive but has not gone gluten free, nor do I expect him too. One of the hardest things for me is figuring out what to eat when Im short on time. I work full time during the day and go to school three nights a week. After work I have enough time to run home, take out the dogs, and grab a quick something to eat before I have to be in class. I got used to being able to get fast food or a bowl of cereal. That doesnt work anymore, unless Im eating corn chex.

Anyway I would welcome any suggestions or ideas that anyone has. And I also like to hear stories about how other people have and are coping with gluten intolerance or celiac disease. Or any other food allergy for that matter. Please feel free to also contact me by email or on yahoo messenger.
Thanks!
You are right, corn chex are not gluten free. Its rice chex that Ive been eating.
Thanks for all the great advice and tips and support!
