Has Anyone Been To Peru While Gluten-free?

I'm heading to Peru in November, and looking for hints. We're hiking the Inca trail, and looking for a guide service that can accommadate.

You've probably already booked your trip, but I'm planning to go there myself, and I found that Peru Treks (www.perutreks.com) says that they can accommodate gluten-free diets, and Enigma (www.enigmaperu.com) has a comment from someone on their website that says that their gluten-free food was great.

Have you found anything else? I'd love to hear about any other places (even outside the Inca Trail) -- I've been having difficulty finding info.
