Keto Gram Crackers
This was inspired by the vegan protein chips made by Tom Kiryu

2/3 (75g) Cup Sancha Inchi Protein https://julianbakery.com/…/pegan-protein-powder-sacha-inch…/
1 tbsp chia seeds
1-2tsp cinnamon
2tsp Erythritol
1/4tsp pure monk fruit or uncut stevia
1/2 cup warm water
2tbsp coconut oil

1. Preheat oven to 375F with a Pizza stone or baking sheet in it.
2. Prepare a sheet of foil with a bit of oil on it
3. Whisk your dry ingredients til well incorporated, then add in your liquid and whisk well. then transition to a spatula to fold the dough a bit and dump onto the foil sheet.
4. Using wax paper over the top flatten out the dough into a even sheet, then thinner the crisper, thicker you get chewier. Then using the spatula or dough knife (nothing sharp) Make lines cutting the sheet into 1.5-2" squares.
5. Place the foil on top of the pizza stone/sheet in the oven and bake for about 20mins then turn off the oven open to check on it then shut it again and leave it in their to crisp up for 20-45mins.

      So I had my follow up appointment with my new GI to go over my pathology report. There are no signs of celiac or UC, he said there were no medications he needed to prescribe and that my treatment regime was working great. He suggested my random digestive issues could be a new sensitivity or a intolerance or even hormone related like with insulin.
      He was quite surprised with the UC healing without RX and even had to get my old records from the GI that diagnosed it. >.< I was sort of hoping I could get a cannabis RX for it, but I guess I will keep just living on hemp and cbd for my other issues.

      I often suggest making crustless quiches to people, here is one of the base recipes I have used.
      10 Slices of Turkey Bacon, Cooked and chopped (I did a mix of crispy and chewy cooked)
      1lb bag of frozen spinach thawed and squeezed of excess water (Take a tiny bit of a corner off thaw in the sink and squeeze water out the corner)
      1/4 onion sliced very thin (mandolin helps)
      6 large Eggs
      3/4 cup Almond or Coconut Milk
      8oz Shredded Dairy Free Cheese of Choice (I used Lisanatti Almond Cheddar)
      1/2 tsp salt
      1/2 tsp ground pepper
      pinch of nutmeg
      1. Preheat Oven to 350F And line a 8x8 Pan with Parchment paper
      2. If not done cook and chop bacon, thinly slice the onions, and grate the cheese
      3. Combine everything in one large bowl, mixing well, and scrape with a spatula into the pan.
      4. Bake in the oven for 40 mins makes 4 extra large servings or 6 medium

      You can make this in advance and reheat and eat for breakfast in the morning quick. This is a base recipe, feel free to add peppers or other seasonings to it.  I did make this really simple and found it works without any advanced cooking like sauteing stuff prior (although that adds much better flavor)

      2 weeks of working on it and I got the recipe down, just featured them at a farmers market and sold out.
      Makes 10 4" bagels. in grams, so you can half or quarter the recipe.
      3 Cups (360g) Almond Flour
      1/2 Cup (56g) Flax Meal
      2 tbsp (14g) Coconut Flour
      2 tsp Baking Soda
      2 tsp Baking Powder
      1/2 tsp salt
      10 eggs
      1/4 cup (60ml) Apple Cider Vinegar
      2-3tbsp Everything Bagel Seasoning (optional sprinkle a bit on top before baking)
      1. Preheat oven to 350F, grease bagel mold and dust with coconut flour
      2. In a large food processor pulse your dry ingredients (Almond Flour, Flax Meal, Coconut Flour, Baking Soda, Baking Powder, Salt)
      3. Add in your Eggs and Vinegar and mix well.
      4. If your quick you can pour it into the molds or have to use a spatula, I fill 4" molds about 1/8" from the top
      5. Bake in the oven for 25 mins, let set in the mold for 20-30mins before removing and setting on a wire rack. They can be kept on a counter for 2-4 days or longer in the fridge, Freeze well too.

    I spoke with my GI's office on Friday and was told the wait time would be 10 months - I kind of indicated that I wasn't sure I could wait that long and she offered to put me on their cancellation list, said this is the best she can do for getting me in any sooner. The GI didn't tell me to start the gluten challenge, I was not aware of how long the wait time was and started eating gluten on my own decision.  And now that I'm on the cancellation list I have to keep eating it so that if I get
    Im the same, I never know what to eat, some food does better than others for me, I went on to make my own soup and Im glad I did, I should do it more often and at least then J know what's going in to it, it wasn't the best first try but I enjoyed it haha
    Thank you for the advice, in the end I went and made my own soup, not great for my first try but it was better than potentially making myself worse, I enjoyed it, I got some vitamains too to take, I was able to find a liquid Vitamain B Complex, the store I went to was helpfull enough to show me what was Gluten Free.   I fealt awful around then, Im feeling like I have more energy now I can actually do things and focus more, Ill keep on like I have been, Im not 100% and still have some B
