Celiac Challenges Chicago

I chomped pizza, guzzled beer, savored chocolate fondue, crunched Emeril's popcorn candy bundt cake, sipped Tom & Jerry's, and slurped yogurt shakes. Yeah, Ba-Bay! I think I gained a few pounds! My clothes aren't loose!

There's actually a GOOD side to my stepdad having OCD...I got my own miniature butter for my stay and they only use squeezable jelly and there are never crumbs in or on anything!!!!!Plus my mom has a pan in which they only cook eggs, so she used that to cook my food in.

My mom always makes me chocolate fondue when I visit, so that wasn't new. She was stoked about making the cauliflower lasagna (supposed to taste just like real lasagna!!! <_< ), tho, because Gramma was making regular lasagna for everyone at Xmas dinner. Then Gramma succombed to the guilty bug (*evil laugh*)and decided to dump the lasagna idea and make beef for the meal. So I ate their food.

The popcorn cake was the centerpiece- she had it on a cake pedestal on the table and it made quite the conversation piece about how lovely and original and yummy it looked. I did get glutened, but not MAJOR. Guilt-laden Grandma had gone GLUTEN FREE GONZO and made me gluten free meatballs, too. I think that could've been it. Or it could've been the fact that a mentally disabled member of my family had snuck into some of the food and contaminated it, because I saw him doing odd things with food and asked him and he explained. He can't help it.

Anywho, I didn't have to explain too much about celiac, which was a goal of mine...but then my Taurus Bull-y brother made a comment about my celiac being all in my head- I guess he can't stand me getting some special attention. But that was fine because I joshed him back about his allergies to seeds, poultry, fish, eggs, etc. AND how he had to STAB HIMSELF with the EPI pen just a few weeks ago because he got bitten by an ant!!! Everyone guffawed at that one.

Eventually mom made the caulflower lasagna as I looked on. It was ok, but more of a side dish. I won't be making it again. Since that was all she had planned for me to eat, I had to quick boil up some brown rice pasta to add to it, because cauliflower for dinner is not satisfying at all.

Good thing Gram made me the perennial fudge with marshmallow chunks and raisins for me! Mmmm
