There is a local ice cream shop I like (haven't had ice cream since I developed a wheat allergy this past winter) and I asked to see the ingredients of their soft ice cream. They said they knew the basic hard ice creams were fine because they have Celiac customers. But they weren't sure about the soft. They use Welsh Farm products. I called Welsh Farm (the parent company anyway) and they said the soft vanilla was gluten free (I didn't ask about the other softs). But I thought I'd share the ingredients with you guys to see what you think as well.

10% Vanilla Soft mixture:

Milk, Cream, Whey (from Milk) Skim Milk Powder, Sucros, Corn syrup, mono & Diglycerides, Guar gum, tetrasodium, Pyrophosphate, carrageenan, Natural & Artificial Vanilla flavor.
