Easy, Fast, And Balanced...

I know a lot of you have noted that it can be tough to eat gluten-free on a tight schedule, so I thought I'd share one of my scrounge night new favorites. It's adaptable, and balanced, and can be made and eaten in 15 minutes, getting only a plate and a bowl and a fork dirty.

Tuna Tacos

1 can tuna fish, drained

1/2 avocado, or 2 tbsp sour cream or sour cream alternative

1/2 cup fresh salsa, or 3 tbsp bottled salsa

2 corn tortillas

Mash the avocado, and flake the tuna in. Mix in the salsa until it's well combined. Heat the tortillas, one at a time (just before you eat them) and put half of the mixture onto a tortilla, fold in half, and eat like a taco!

This sounds like a great lunch idea for the kids and me. I think I'll try it when the wife is at work, she hates avocados as well as tuna. I love them both though, and the kids will eat anything. :)
