  1. Turkey breast, mashed potatoes and gravy, green beans.
  2. No cooking here. I am worn out and it was warm here. Not hot but uncomfortable. For daughter there was leftover Mexican rice with veggies and chicken and some good Mexican cheese sprinkled over. Also corn tortillas and black olives. I just had bean tacos with cheese and olives. Should have had veggies, I know. But I didn't.
  3. I am trying to use up all the old food. I had some little pearl potatoes that were fine the last time I checked but they had gone moldy! And most of the bag of russets I had were also bad.   4. I chopped up an onion, a red bell pepper and a green bell pepper. Cooked those in a bit of olive oil with some cubes of potato. Then added some cooked, crumbled sausage. I'm not a super big fan of sausage but daughter loved it! Also had some gluten-free pumpkin and millet bread from the health food store. It was over $7 a loaf. I could live without...
  5. Well this doesn't make me happy. I have a coupon I was going to use for these. Daughter is allergic to wheat so they would be out of the question if in fact there is wheat in them.
  6. Leftovers here. The other night I baked chicken breasts with a little Herbamare, freeze dried onions and gluten-free mushroom gravy. Served with white rice and green beans. I didn't make enough chicken. There was a lot of gravy left and some rice. I mixed in some canned chicken. Daughter will be eating that. I'm going to have leftover baked beans...
  7. I'm not cooking tonight. I made a Teff wrap for daughter with a little margarine, lettuce and turkey. She is also having baby carrots and apple slices. Not sure what I'll have. Maybe a can of chili.
  8. I'm not the one with the gluten issues. But I don't usually eat a big breakfast. Today I had cottage cheese and toast. Sometimes I had cereal.   9. Toasted cheese sandwiches. Mine had tomato. Ceaser salad kit from Costco. Croutons went in the trash and were replaced with gluten-free ones. Added black olives. Also apple crisp.

  12. Disappointing meal tonight. Hormel's canned tamales topped with white onion, green pepper, a can of tiny diced tomatoes and a bit of chili powder.   13. Was going to do taco salads tonight. Actually daughter did have that but I did not. I had a problem on Sunday. Had ordered pizzas from Garlic Jim's.   16. This came out very good! I did add a bit of Herbamare seasoning to the chicken after it was breaded because I felt like it wasn't enough seasoning. And when I make it again, I will have an extra lemon or two for topping. I had three lemons. They were small and not overly juicy. I used two of them for juicing.   18. I made gluten-free coffee cake for tomorrow and I will be making a sausage casserole to go with. Everyone is on their own for lunch. Probably sandwiches. For dinner, lemon chicken, plain white rice and green beans. Candy and cookies leftover from Christmas Eve if they want dessert.
  19. Tomorrow will be gluten-free pasta with red sauce. I will add a little ground beef that I have already cooked and put in the freezer. Have to have a quick meal before dance class.
  20. We have to have a super quick to fix meal tomorrow so I'm heating up a turkey breast that is already cooked, making instant mashed potatoes with water and Nucoa only (no milk) and I'll probably pop open a can of green beans.
  21. Leftover pot roast makes the best soup! I would also add some veggies such as onions carrots and celery at a minimum. Maybe also green beans, corn and peas. Heat it through and then add the noodles since they are already cooked.
  22. I had a big bowl of leftover cranberry salad and a prepared falafel wrap from the grocery store. The wrap wasn't gluten-free but I don't need gluten-free. The store does make prepared falafel patties and I do get those sometimes. They are gluten-free. I also get some lettuce and tomato slices from their prepared food bar. We make sandwiches out of them...
  23. We were out all day too. Early lunch at Olive Garden for SIL's birthday. They all had cake and ice cream. Daughter had some gluten-free cookies and ice cream. I tried a bit of a cookie. Tasted oddly burnt to me. I can't remember the brand but I think I read here that they are sold at Starbucks. I've just never seen them at Starbucks. After that...
  24. This is an old post. I have never seen gluten in refried beans. Other types of beans, yes. Like Ranch beans or Chili beans. They are super easy to make yourself though. Either cook some dried pinto beans or use canned beans. Mash with a potato masher and if desired add some olive oil and seasonings such as cumin and powdered onion.
