  1. Hi Scott: A wonderful, thoughtful explanation. Controlled human studies would be very interesting and quite informative. I have been eliminating certain foods and have narrowed it down considerably. Having other autoimmune diseases along with Celiac has become rather challenging. I appreciate your input, thank you. To be specific, I was concerned about Gluten Cross-Reactivity e.g. Cross- Reactivity between a-gliadin and non-gluten foods consumed on a GFDiet. After much trial and error, the following supplements are now a daily MUST HAVE for me. We have to keep in mind, too much can be just as damaging as too little.   5. Hi Jane: You may want to try the D3 I now take. I have reactions to fillers and many additives. Sports Research, it is based in the USA and I have had no bad reactions with this brand. The D3 does have coconut oil but it is non GMO, it is Gluten free, Soy free, Soybean free and Safflower oil free. I have a cupboard full of supplements that did not agree...

  7. I have had celiac for many years and still had terrible digestion. I cook from scratch, never eat anything with gluten ( A Gut that needs special attention seems to affect many who suffer from celiac) . I made my own Kombucha, it helped my Gut much more than the yogurt I made but I still had issues. Water Kefir did nothing. As a last resort I made MILK Kefir...

  11. I was diagnosed with severe Celiac in 1980 . I was in the hospital for a long time. They finally took many tests and I was diagnosed with severe Celiac Disease. It took me 3 years to get my Gut to where I could eat regular meals. I ate beef 2-3 days a week, chicken for the other days.... Not large amounts! However, I have always become very, very sick when eating one of the main ingredients in the majority of gluten-free foods - POTATO STARCH. I eat a potato, or anything with potato starch...
