Ah this evening I will be making a Stuffed Pepper Soup. Before I get started on it, I will be making copy cat Campbells Tomato Soup , and THEN we will get busy! I just finished a Salted Caramel Fudge that is chilling in the fridge. I even did dishes today as the others were complaining that I "only" cook. Someone needs to have a talk with them! LOL -
Salted Caramel Fudge I was shopping and looking for caramel that was grain free. I found ZERO corn syrup free offerings so I bought some heavy cream and went home to make my own. Brynja's Artichoke & Sausage Baked Ziti This one is not grain free. I used Tinkyada pasta. It is ONLY made from rice and it has GREAT texture. It is the only grain I have found that my body will agree to. If you are unable to have any grains, you can modify this with some carrot noodles spiralzed! I've done it that way too. I did up an Artichoke and Sweet Italian Sausage baked Ziti (Tinkyada, I <3 you) and in the fridge, awaiting our drool, is a White Chocolate and Amaretto Cheesecake on a grain free almond/amaretto graham style crust. There is also a bottle of Tangello (Limoncello orange style) in the freezer to go with. -

It is a leftovers kind of day here. I defrosted the pork roast and made the sandwiches layered with apple chutney and extra sharp white cheddar for lunch and tonight we will have the cheaters lasagna I froze from the other day. Yeah I normally keep mine sauce super dry too because I usually use it for spiralized noodles but I added some water to this for the noodles to absorb.
