Super Yum Wild Rice Salad...sooooo Good!

I got this from a local natural foods store deli while my mom was visiting in September, we loved it and copied down the ingredients. Here is what I came up with, but feel free to modify to your needs and desires

New Season's Wild Rice Salad with dried Cherries and toasted almonds

1 1/2 cups wild rice

1 cup dried cherries

1 red pepper, chopped small

1 cup red and green onion (mostly red)

1 apple, chopped small

1 cup slivered (quartered) almonds, lightly toasted

7 tbsp. balsamic vinegar

3 tbsp. olive oil (preferably extra virgin)

touch of canola oil (if desired, I didn't use)

salt and pepper to taste

Cook rice according to directions on box. Mix oils and vinegar, salt and pepper and set aside. Cut up the rest of ingredients and mix. Add half of oil/vinegar mix to veggies while rice cooks. After rice is cool, mix in with the veggies mix. Add rest of oil and vinegar.
