Chipotle Corn and Two-Bean Chili

From Cooking Light

This hearty chili has more than 1,170 milligrams of potassium per serving.

1 pound ground round

1 teaspoon canola oil

1 1/2 cups chopped onion

2 garlic cloves, minced

1 tablespoon chili powder

1 tablespoon ground cumin

2 teaspoons minced fresh oregano

3/4 teaspoon salt

1 1/2 cups frozen whole-kernel corn

2 (14.5-ounce) cans no salt-added diced tomatoes, undrained

1 cup coarsely chopped zucchini

1 cup water

1 tablespoon finely chopped canned chipotle chile in adobo sauce

1 (15-ounce) can kidney beans, rinsed and drained

1 (15-ounce) can black beans, rinsed and drained

6 tablespoons fat-free sour cream (optional)

6 tablespoons thinly sliced green onions (optional)

6 tablespoons (about 1 1/2 ounces) shredded reduced-fat sharp cheddar cheese (optional)

Cook beef in a Dutch oven over medium-high heat until lightly browned; stir to crumble. Drain well; set aside.

Add canola oil to pan. Heat pan over medium-high heat. Add chopped onion to pan; sauté 4 minutes or until tender. Add garlic; sauté 30 seconds. Add chili powder, cumin, oregano, and salt; sauté 30 seconds. Stir in corn and tomatoes; bring to a boil. Reduce heat, and simmer 3 minutes, stirring occasionally.

Stir in beef, zucchini, water, chipotle chile, and beans; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until zucchini is tender.

Spoon 1 1/2 cups chili into each of 6 bowls. Top each serving with 1 tablespoon sour cream, 1 tablespoon green onions, and 1 tablespoon cheese.

Yield: 6 servings

This was really good & unique.

I used 99% fat-free ground turkey instead of beef and I omitted the cheese, green onions and sour cream garnishes. I thought this was going to be very spicy, but it wasn't at all. In fact, if you like spicy things, you might want to seriously up the chili powder.

Just wanted to add that I had a reaction to this (I think) and it could only be the chipotle chile in adobo sauce, so if anyone is going to try this (it's really good), make sure to verify your brand of chipotle chile in adobo sauce is gluten-free. The brand I reacted to was La Costena.

      Definitely worth speaking to your gastroenterologist about this. My own told me that by using Gaviscon a barrier forms over the contents of the stomach and stops gas and acid irritating the throat.  In fact, he said to me that because I found relief using Gaviscon that was a very clear indicator that reflux was the cause of that particular issue.   A wedge pillow will really help with this - or raising the top bed legs with bricks.

      I did get the pneumonia vaccine about 4 years ago. I had this amazing allergist who did all those vitamin deficiencies test and told to get that vaccine. Unfortunately she retired.  I haven’t been to an allergist in a few years,  I’m not sure what my levels are now. I did have a pulmonologist who wasn’t concern and said I seemed fine to him that I was young etc. But yes I think I should at the very least get a different opinion. Thank you for your reply

      Yes I do have acid reflux. I’m not on anything for it at the moment. I sometimes wonder if that’s what it could be because I get heart burn every night. I may revisit my gastrointestinal doctor again. Thanks for the reply

      Hi @HelloFlowersGoodbyeFlour I wonder if you suffer from reflux, as if you do, you may find it could also be irritating your airways.  I shall explain: I have to use a blue inhaler from time to time, and it seems to be related to reflux.  Never had any trouble before my coeliac diagnosis, the reflux seemed to be something that developed following a holiday to France in 2019, where I had been exposed to gluten.    The reflux continued into the autumn and winter, my throat itched to begin with, particularly after meals, but it then that feeling of irritation seemed to spread to my lungs.  I even found it difficult to breathe on occasion. What stopped it in its tracks was using a wedge pillow at night, following a reflux diet (you can find them online), not eating 2-4 hours before bed and also having a dose of Gaviscon Advanced at night, which forms a barrier so that acid/food can't go back up your esophagus.  The throat irritation faded, and then I found it easier to breathe again. Just mentioning in case it could be a contributing factor.

      Since initially getting your D checked a few years ago, has it since rebounded to normal levels? Sounds like at some point you got it checked again.
