Pumpkin Mousse (made From Leftover Pumpkin Pie)

I just thought I would post this since it was a success in my household. We had leftover pumpkin pie and flan in the house from thanksgiving that just wasn't getting eaten so I decided to reinvent it for dessert tonight (inspired by the food network). I'm sure it would work with just pumpkin pie by itself too. My husband and his house guest ate this up very quickly!

I am guessing on the measurements below since I didn't actually measure anything. It was about 2 slices of pumpkin pie (no crust) and about a half a plate of 3/4 inch tall flan).

Pumpkin Mousse

1 cup leftover pumpkin pie and/or flan (estimated)

1/2 cup heavy whipping cream (estimated)

2 cups heavy whipping cream

1 tsp vanilla

Oh my gosh yes! It was incredibly easy and they loved it! It looked fancy too in the margarita glasses. I love it when I make something that is easy, inexpensive and looks like its gourmet! I also can't stand to see things go to waste so it's great when I can get them eaten up without having to force them on people! ;)

:lol: Yes! I love pumpkin! I still have some left from halloween (frozen of course) so we'll see what other things come out of it...

Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep...

      Constant low back, abdominal and pelvic pain!

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
