Gluten=bad

Banana Pudding

The other day I made banana pudding using Josef's gluten-free vanilla graham crackers that I ordered from gluten free.com. It turned out really good. Here's how I made it:

Ingredients

2-3 ripe bananas sliced and sprinkled with lemon juice (to prevent browning)

About 1/2 a pack of Josef's gluten-free vanilla graham crackers broken into pieces

1 large box of Jello instant vanilla pudding made according to package directions

1 small tub of Cool Whip

1 small can of sweetened condensed milk (not evaporated)

Directions

Start with a layer of graham crackers in a casserole dish

Top with a layer of bananas

Spread with a layer of pudding

Mix Cool Whip with sweetened condensed milk and top pudding layer with a portion of this

Continue layering until all ingredients have been used

Refrigerate for several hours so the flavors have a chance to mix

Refrain from eating the whole thing by yourself :D

This sounds really good. I have been thinking about trying one of those recipes for graham crackers and this would be an excellent way to use them. I'm hungry now! LOL
