Puff Pastry

Has anyone tried to make or found a place to buy gluten-free puff pastry?

I have been rather discouraged making bread type products from scratch. I did make some corn muffins that were pretty good using a mixture of gluten-free flours. But the pizza crust I also made using corn starch, rice flour & tapioca starch was HORRIBLE. Crummbled to pieces & tasted uncooked. ICK :(

Try the pizza crust again using some of the bean flours in it. It will hold together much better. We use the version in Bette Hagman's books. I find it works best when I bake the crust a little before putting the toppings onto it. My daughter is middle school age and has actually taken this to school functions where they were ordering pizza for the other kids. Some of them wound up eating her pizza and enjoying it.
