Looking For Flour Substitues

I bought a few celiac disease cook books. Most of the recipes call for 3 or 4 different kinds of flour. :blink: I try to go to the local health store to get it all but always leaving without one. So, If I don't have soy or soya flour what can I use instead? Is bean and gram the same kind of flour? Can I use gluten free flour instead of reg flour? If anyone knows the different ways you can substitute all the differnt flours PLEASE :lol: let me know!



P.S. Baking makes me happy - I wanna bake somethin'!
