Differences In Xanthan Gum

Rate this topic

Recommended Posts

My first batch of xanthan gum was NOW brand. It was a really fine powder. Since I couldn't find it next time I purchased, I have bought EnerG brand. It is a little more granular. Does this difference affect baking results? I'm still new enough at baking gluten-free that I don't know if my flops are my fault, the recipe's fault, or the ingredients' fault. :P

I have not found a difference when using different xanthan gum brands so you should be fine.
