Amaranth Breakfast

I am on an pretty limited diet right now, so I guess boredom drove me to create this yummy breakfast. Sorry, I'm not sure the measurements so you'll have to experiment.

Cook amaranth, one finely grated carrot, and 1 t ginger in coconut milk. Serve hot with a dollop of coconut cream on top. No sweetener necessary, though I admit I might have added a little honey if I was allowed to have it. Also, I was going to serve with sliced mango on top but my mango had past its prime.

Sounds like a yummy combination. I like the idea of ginger and coconut milk. I shall give this one a try. Thanks. Angie :)
