High Humidity Baking

I've had brownies take more than the recommended time with two different boxed mixes now. I never had to modify wheat flour recipes, but I'm assuming gluten-free recipes are more sensitive.

So, what modifications should be made for high heat and/or high humidity. And, what is normal vs. high humidity?
