Fabulous Fruit Cake!

This is one of my favourite cake recipes, as it is very simple and quick to make and can last up to 2 weeks in an airtight container, but im sure it wont last that long, because you'll keep running back for another sneaky slice! It freezes well, which is an added bonus! This is a gluten and egg free recipe, and i used Soya Milk to make it Dairy Free, but you can also use cow's milk.



1 cup Raisins

6-7 Dried apricots, roughly chopped

1 cup Dessicated Coconut

1 cup Gluten Free Self Raising Flour

1/4 cup Caster Sugar

1 cup Soya Milk

Ground Cinnamon (optional)


1) Preheat Oven to Gas Mark 4

2) Mix all ingredients together with a wooden spoon.

3) Transfer into a bread tin and smooth the top with the wooden spoon.

4) Shake cinnamon over the top of the mixture until it is well covered.

5) Place in the oven for 45 minutes or until a knife inserted in the cake comes out clean

6) Transfer on to a wire rack to cool.
