Flour Question

hi guys, I've been doing pretty good adapting recipes to gluten-free, made a great seafood pasta with white sause today :D but I'm lost when it comes to flour..If a recipe calls for a cup of flour or I need to bread chicken what type of flour would I use? rice?? I've been using cornstarch when its only a TBLS or for thicking a sause.

I have been using a gluten-free All Purpose flour mix made by Bob's Red Mill. There are several out there. I actually just bought a 5 lb bulk package of Bette Hagman's mix online the other day to use when the Bob's runs out. I used cup for cup with the Bob's. I made my homemade chocolate chip cookies with it and couldn't really tell a difference!

kim, I have the bobs all purpose, It made me sick, I think its the bean flour he uses.

This new one I ordered online does not use the bean flour...only white rice flour, potato starch flour and tapicoa flour. I was going to mix it myself, but for 5 lbs it was only $10.79, so it seemed better to do it that way. It can be used cup for cup as well, according to Bette Hagman's cookbooks.

that sounds great..where did you order it from? I was thinking of getting one of her books..do you have any?

I have her newer one "The Gluten-Free Gourmet Cooks Fast & Healthy". I borrowed a couple of her others from DH's coworker who is Celiac too and they are great cookbooks! She has that flour mix and her 4 bean flour mix in the books, plus TONS of other great recipes! You could try the library first to see if you like them or will use them.

I'll take a look for the cookbook..we have a used bookstore in town. I'm sorry to say I'm banned from the library :huh: I took 3 books out 12 years ago and never brought them back, now I can't find them :rolleyes:

I have the same problem with library books! LOL! I have been better since I have had my kids, but I can't seem to ever bring them back on time. We have a small library in town that doesn't have overdue fees....I like that A LOT! hehe!

In my opinion, the cookbooks are worth the $$. I find myself getting bored eating the same thing over and over and I am so sensitive to so many different things that it is nice to be able to try new recipes.

ya, thats whats going on with me..I'm eating chicken so much I think I'm going to wake up and find I have wings and feathers lol

I now seem to be having trouble with soy, had it this week and it felt like I was glutened, I wish there was an easy way to figure out the intolerances, its a guessing game

      Definitely worth speaking to your gastroenterologist about this. My own told me that by using Gaviscon a barrier forms over the contents of the stomach and stops gas and acid irritating the throat.  In fact, he said to me that because I found relief using Gaviscon that was a very clear indicator that reflux was the cause of that particular issue.   A wedge pillow will really help with this - or raising the top bed legs with bricks.

      I did get the pneumonia vaccine about 4 years ago. I had this amazing allergist who did all those vitamin deficiencies test and told to get that vaccine. Unfortunately she retired.  I haven’t been to an allergist in a few years,  I’m not sure what my levels are now. I did have a pulmonologist who wasn’t concern and said I seemed fine to him that I was young etc. But yes I think I should at the very least get a different opinion. Thank you for your reply

      Yes I do have acid reflux. I’m not on anything for it at the moment. I sometimes wonder if that’s what it could be because I get heart burn every night. I may revisit my gastrointestinal doctor again. Thanks for the reply

      Hi @HelloFlowersGoodbyeFlour I wonder if you suffer from reflux, as if you do, you may find it could also be irritating your airways.  I shall explain: I have to use a blue inhaler from time to time, and it seems to be related to reflux.  Never had any trouble before my coeliac diagnosis, the reflux seemed to be something that developed following a holiday to France in 2019, where I had been exposed to gluten.    The reflux continued into the autumn and winter, my throat itched to begin with, particularly after meals, but it then that feeling of irritation seemed to spread to my lungs.  I even found it difficult to breathe on occasion. What stopped it in its tracks was using a wedge pillow at night, following a reflux diet (you can find them online), not eating 2-4 hours before bed and also having a dose of Gaviscon Advanced at night, which forms a barrier so that acid/food can't go back up your esophagus.  The throat irritation faded, and then I found it easier to breathe again. Just mentioning in case it could be a contributing factor.

      Since initially getting your D checked a few years ago, has it since rebounded to normal levels? Sounds like at some point you got it checked again.
