Healthy Muffins ( Preheat 180 C bake )

¼ cup Hazelnut meal

1 ½ cup brown rice flour

¼ cup amaranth flour

1 teaspoon guar gum

3 teaspoons of gluten-free baking powder

STEP1.In a your Kenwood/Kitchen Aid mix together all your dry ingredients.

1/3 cup grape seed oil

2 beaten eggs

1 teaspoon vanilla essence

½ cup maple syrup

¼ cup sheeps milk yogurt / almond/ rice/ soy milk

STEP 2.Mix together in a separate bowl.

1 ¼ mix frozen berries strawberries, blueberries, raspberries, blackberries

1 red apple peeled and cut into small blocks.

STEP 3.Place in a glass bowl

2 tablespoons of shredded coconut

Add Step 2 to Step 1 and add step 3 to Step 1. Pour into a bite size muffin tray that has been sprayed with oil. STEP 4 Sprinkle each individual muffin with the coconut. Bake till the muffins are cooked about 30 minutes.

thnx for posting--recipe looks good and i have been telling myself i need to start using my amaranth flour too...
