Need A Multiple Allergy Bread Recipe

I don't have time to experiment right now and most cookbook bread recipes always have at least one or two things I can't have. Does anyone have a simple, all-purpose bread recipe I can make every couple of days and depend on for now? I don't mind it having the texture of banana bread, as long as it is light, toasts well and isn't rubbery.

I can't have: gluten, dairy, soy, eggs, yeast, legumes, almonds, sesame, corn and xanthan gum

I haven't tried this recipe yet, but it looks good. It is a cinnamon bread, but I'm sure you could leave the cinnamon out if you prefer. Here is the recipe.


Cinnamon Bread

1/2 cup rice flour

1/2 potato starch

2 tbsp tapioca flour

1/2 tsp corn free baking powder (recipe below)

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 cup sugar

2 tbsp oil

1 egg replaced (recipe below)

1/2 cup orange juice

Preheat oven to 350*. Combine dry ingredients and blend well. Add oil, egg replacer and orange juice. Mix till well blended. Pour batter into a greased loaf pan. Bake 30-35 minutes.

Corn free baking powder

1/4 cup baking soda

1/2 cup cream of tartar

1/2 cup arrowroot flour

Mix well and store in an airtight container. Mix before each use.

Egg Replacer

1 1/2 tbsp water

1 1/2 tbsp oil

1 tsp corn free baking powder

Combine all ingredients. Replaces 1 egg.
