gluten-free Diet- How Long For Symptoms To Leave?

I have been on the gluten-free diet for a week now and at first I felt GREAT and within a few days lost about 3-4 pounds of water weight. However, just today and yesterday I have begun to feel some bloating and gas again here and there. I mentioned in an earlier post that my blood work for celiac came back negative, but I was still strongly advised to start the diet. Now I'm wondering if it's really the answer to my problems. Have others experienced this and what could be the cause?
