Lemon Meringue Pie

Patti (Jerseyangel) gave me this recipe :P

Prepare a baked pie shell (Gluten Free Pantry Piecrust mix), set aside to cool

Put into a saucepan:

1 and 1/2 cup of sugar

6 tablespoons of cornstarch

1/4 teaspoon of salt

Gradually blend in:

1/2 cup cold water

1/2 cup fresh lemon juice

When smooth, add:

3 well beaten egg yolks

2 tablespoons of butter or margarine

Stirring constantly, gradually add:

1 and 1/2 cups of boiling water

Bring mixture to the boil and let simmer another minute

Pour into cooled pie shell and cover with meringue

MERINGUE

Heat oven to 350

Whip until frothy:

3 egg whites

Add: 1/4 teaspoon cream of tartar

Whip until stiff, then beat in, one at a time:

4 tablespoons of sugar

1/2 tablespoon vanilla

Spread on pie, bake for 15 minutes

Cool and enjoy!! :D

Just wanted to share with you one of the best desserts since going gluten free. Easy to make and they are GREAT!

Lemon Meringue Pies (Ice Box Pie)

Ingredients:

1 can condensed milk

4 eggs (separated)

5 ounces lemon juice

2/3 cup sugar

Ginger snap cookies (MIDEL)

Drop 1-2 cookies in the bottom of individual glass heat resistant bowls. (will make about 4)

Combine condensed milk, yolks, and lemon juice in bowl and mix well using a hand held mixer. Pour over cookie in individual dishes.

Whip egg whites with mixer until a soft peak is formed. Add sugar and whip into egg whites. Pour over lemon filling and cover completely.

Place individual bowls on large baking pan and bake at 350 degrees for about 10-15 minutes until top is golden brown.

Allow these to cool and place in refrigerator to store.

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
