I'm A Newbie ...... Again!

Long story short I was diagnosed when I was around 12 months old (1974) when I turned 8 (1983) the Doctor at sick kids thought it would be a good idea to see if I could tolerate gluten so they started giving be small amounts then about 1 1/2 years later the Doctors said I was in "remission"

fast forward about 15 years and I started getting the same symptom I had when I was a baby, I went to see a doctor at a clinic (because I was in University and no where near my regular Doc) and asked if it could be the Celiac coming back he said with Celiac once you have it it never goes away you were probably diagnosed wrong. What you have is IBS. I lived with the symptoms for years then a few weeks ago I went to the Doctors for a check up and he sent me for blood work, to check my Thyroid and also the Celiac panel. Which came back positive and here I am.

I have a question, I remember that I had to keep the bread in the freezer, does it still need to be frozen?

The gluten free world is changing rapidly. Really good foods now! No more gritty foods if you want to pay for the best of the best!

Most breads should be frozen if not eaten in a couple of days. But there are many breads that have a shelf life for a week or so. I don't use bread daily so I always freeze my bread. If you put wax paper between the bread you can take out only what you plan on using. This way it is not being wasted.....

Thanks. And I'm glad to hear that the food is a lot better. I made pizza the other night and my husband and I were pleasantly surprised.

I'm also wondering has anyone else out there been told by their doctor to add gluten in their diet when they were kids?

Yes that was what many was told way back when. The doctors didn't know any better...& now if only we could get them to check-out patients that do not get better !It is truly a sad situation..

      Definitely worth speaking to your gastroenterologist about this. My own told me that by using Gaviscon a barrier forms over the contents of the stomach and stops gas and acid irritating the throat.  In fact, he said to me that because I found relief using Gaviscon that was a very clear indicator that reflux was the cause of that particular issue.   A wedge pillow will really help with this - or raising the top bed legs with bricks.

      I did get the pneumonia vaccine about 4 years ago. I had this amazing allergist who did all those vitamin deficiencies test and told to get that vaccine. Unfortunately she retired.  I haven’t been to an allergist in a few years,  I’m not sure what my levels are now. I did have a pulmonologist who wasn’t concern and said I seemed fine to him that I was young etc. But yes I think I should at the very least get a different opinion. Thank you for your reply

      Yes I do have acid reflux. I’m not on anything for it at the moment. I sometimes wonder if that’s what it could be because I get heart burn every night. I may revisit my gastrointestinal doctor again. Thanks for the reply

      Hi @HelloFlowersGoodbyeFlour I wonder if you suffer from reflux, as if you do, you may find it could also be irritating your airways.  I shall explain: I have to use a blue inhaler from time to time, and it seems to be related to reflux.  Never had any trouble before my coeliac diagnosis, the reflux seemed to be something that developed following a holiday to France in 2019, where I had been exposed to gluten.    The reflux continued into the autumn and winter, my throat itched to begin with, particularly after meals, but it then that feeling of irritation seemed to spread to my lungs.  I even found it difficult to breathe on occasion. What stopped it in its tracks was using a wedge pillow at night, following a reflux diet (you can find them online), not eating 2-4 hours before bed and also having a dose of Gaviscon Advanced at night, which forms a barrier so that acid/food can't go back up your esophagus.  The throat irritation faded, and then I found it easier to breathe again. Just mentioning in case it could be a contributing factor.

      Since initially getting your D checked a few years ago, has it since rebounded to normal levels? Sounds like at some point you got it checked again.
