Question About Potato Starch

I am new to being gluten-free and my biggest problem at this time is recipes calling for potatoe starch. I can't seen to find it any where other than to order it on line. My question is: can I substitute corn starch for the potato starch in recipes? I would appreicate any help I can get with this. I have a friend who is also supposed to be gluten-free but she found it too difficult and too expensive to continue so she doesn't follow the diet and is really paying for it medically. I was hoping that if I can shouw her how easy (and tasty) it can be, then she would follow her diet.

I have found potato starch at my local Whole Foods in the alternative flours section. I may have also seen it at my local Kroger's in the health food section.

I would say that in most cases, substituting corn starch for potato starch would be fine. If the recipe already called for corn starch, then you might want to try a different starch or flour . . . blends of flours/starches work better in recipes than all one (or almost all one) flour or starch.

If you have a Jewish community in your area, check with them. Potato starch is used a lot in Jewish cooking.

I like potato starch. It seems to make things brown nicely.

I use corn starch for baking instead of potato starch. Sometimes 1/2 of each.
