Coconut (packaged)

Hey! I quickly picked up some Publix brand packaged coconut at Publix today. I am needing for a recipe quickly. Do you think it's ok. Ingredients are: coconut, sugar, water, propylene glycol(sustains freshness), salt, sodium metabisulfite (preserves whiteness). I am actually making blueberry cobbler, and I'm straying from the recipe to make it more intersting. The topping is going to consist of several gluten free cereals, canola oil, maple syrup, coconut, and gluten-free chocolate chips. I am wondering if I should add in some brown sugar and rice flour as well. Intersting.......I know, but I just want something DIFFERENT! Any suggestions??
