What test did you have done? Gliadin is one of the proteins that makes up gluten in certain grains--wheat, barley, and rye (and sometimes oats are included although the protein is a slightly different one). We would probably use gluten and gliadin interchangablely here. Not sure how you could be intolerant of gliadin and not gluten unless you are thinking...

You mentioned you use Pepto Bismol. I just wanted to mention that Pepto works great for me when I have heartburn or a stomach ache BUT it tends to make me constipated and have harder stools (again great for D not so great if you tend towards C). Uno's has been one of the few places I can eat without a problem. It's been a while since I tried their gluten-free pizza but I thought they only had pepperoni and cheese as gluten-free options. Was the pizza on a very thin crust or was it a thick crust? The gluten-free pizza is very thin.

If it is a scratched non-stick skillet then traces of gluten can be stuck in the scrathes. Cast iron is pourous and also could have gluten in the coating. What country are you in? Perhaps there is somethign being lost in language translation. There is allergy to the gluten grains (wheat, barely, rye) and there is celiac disease or gluten intolerance. I am fairly certain I have both. I have no formal testing to "prove" my gluten intolerance but I react to barley malt and have a wheat allergy as well (confirmed by IgE blood tests). I have a theory that those with allergies are more likely to be super sensitive. -
If this is true that it is GREAT NEWS for those of us worried about cc! If the chicken and fries are made with different types of oil then there is even LESS chance that they would accidently fry breaded things in the same oil as the fries. The last time I checked the board rules did not say I could only comment in the super sensitive area if I'm super sensitive. I did say that I could eat the salads there without incident prior to my dairy allergy. Perhaps that comment will help someone else that is sensitive and wants to eat out on occaision. I know many parents of peanut-allergic kids that refused to take their kids to Chick-fil-a because of the peanut oil.
