ARCHIVED Strict Elimination Diet
GlutenFreeManna replied to New Community Member's topic in Coping with Celiac Disease
When I did my elimination diet I cut out all grains, all sugars, all yeast, all processed food, all legumes, all fruit (except for berries) and the top 8 allergens. I ate mainly organic free-range chicken, bison, lamb and beef plus any vegetables and sweet potatoes for my source of carbs. Most people do this for only a week or two and then add new things... -
ARCHIVED Perfect Gluten-Free White/sandwich Bread
GlutenFreeManna replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
Mine didn't last for more than two days (we ate it all the second day, lol) but I put it in a ziploc bag and just left in on the counter. -
ARCHIVED Consumed With Celiac
GlutenFreeManna replied to GFreeMO's topic in Coping with Celiac Disease
I think it's pretty normal to be obsessed in the beginning. You've made a huge lifestyle change. And it's not like you can just "forget" you have celiac. You need to eat everyday and you need to plan your food out if you ar eout of th ehouse a lot or traveling. Eventually it might be that you just don't "worry" about it so much and get into a grove of... -
I don't know what protein in milk I'm reacting to, but I had severe reactions to yogurt, plain milk, butter, mozzarella cheese and goat's cheese. That's interesting about the latex, even before I had the severe reactions to milk I would break out in a red rash on my hands when I used latex gloves or in the hospital if they used something with latex on my...

Funny you should ask that, I can smell milk strongly only when I'm around a lot of children or when I walk by the cheese section. I just figured the kids were drinking milk a lot and that's why I smelled it. I've only had the dangerous allergy since Feb this year and I still crave cheese like crazy. It's so strange to crave somethign that could kill me...

ARCHIVED Help With Dds Test Interpretation
GlutenFreeManna replied to Hislamb's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm not an expert at explaining tests but those results do appear to be negative. However, your dd can still be gluten intolerant without being celiac. Your next step is to either get your GI dr to do an endoscopy with 8-11 biopsies OR test the gluten-free diet and see if her symptoms go away. If her symptoms go away when gluten-free then you have the... -
ARCHIVED Gluten Is Still Sneaking In On Me
GlutenFreeManna replied to Roda's topic in Coping with Celiac Disease
Sounds like you figured it out. If you do figure out a safe brand of tortilla chips you may also want to keep a bag for yourself and not share with the gluten-eating husband. It could be cc from the factory or it could be cc from your husband eating a sandwhich and then reaching in the bag for some chips. Just thought I would mention that in case you are... -
Hi, I'm not anywhere near TX, but I wanted to suggest if you don't get any answers here, seek out your local gluten-free support group and e-mail them. They usually have liasions with drs that know about celiac disease.

ARCHIVED Celiac But No Lactose Issues
GlutenFreeManna replied to Kelby's topic in Coping with Celiac Disease
I think most people eliminate lactose because they still have some symptoms when they go gluten-free. If it doesn't bother you (and you have no mystery symptoms you can't pin down) then no need to cut it out. Enjoy just being gluten-free! -
ARCHIVED Anyone Have Symptoms Get Worse In Cycles?
GlutenFreeManna replied to Emsstacey's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you are still on gluten then get to another dr to get retested, ASAP. Your tests that were negative may be positive now. On a full gluten diet I too had periods of time where I felt better than others but my health got worse (new symptoms/problems developed) with each passing year. -
ARCHIVED Ener-G Flours And Baking Products
GlutenFreeManna replied to dws's topic in Super Sensitive People
I use EnerG Tapioca and EnerG potato starch without problems. I also do NOT tolerate BRM products. -
ARCHIVED Rash Is Back! How Can I Tell If There Is Gluten In It?
GlutenFreeManna replied to AmyinTX's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yeah, it's much cheaper to go with naturally gluten-free foods. I have pasta and bread only ocaisionally--they are only for when I don't feel like cooking or am in a hurry. Most of my meals focus around cheaper staples such as rice, beans, potatoes and corn products instead. Meat, vegetables and fruit are the same price they have always been. The more... -
ARCHIVED In Defense Of 20 Parts Per Million
GlutenFreeManna replied to psawyer's topic in Gluten-Free Foods, Products, Shopping & Medications
I see. Thank you for making it clearer. I have never considered the last group to be super sensitive celiacs, but rather to have a different condition (i.e. refractory celiac). So when you suggested super sensitives look for other causes that is when I was confused because in my mind super sensitives improve once they figure out what is bothering them... -
I've never had any problems with nightshades. If you don't have symptoms from it don't worry about it. Not all celiacs have leaky gut problems.

ARCHIVED In Defense Of 20 Parts Per Million
GlutenFreeManna replied to psawyer's topic in Gluten-Free Foods, Products, Shopping & Medications
That makes perfect sense. I guess I did not take that to be what he was saying since his response came after weluvgators who had said this: "I know that for our family, figuring out those -
ARCHIVED Super-Sensitives--How Often Do You Get Glutened?
GlutenFreeManna posted a topic in Super Sensitive People
We talk a lot in this section about unusual things that glutened us. One may get the impression that we are living every single day still sick and in misery and afraid to touch anything or eat anything. I just wanted to share that for me, personally, when I'm as strict as I need to be I don't get sick with my glutening symptoms. I have not gotten glutened... -

ARCHIVED In Defense Of 20 Parts Per Million
GlutenFreeManna replied to psawyer's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm a little bit shocked at this suggestion coming from admin of this board. Are you really saying that those of us that have found we only heal when eating LESS than the "reccomended" 20 PPM gluten should abandon the super-strict gluten-free diet approach that WORKS for us and go on dangerous side-effect producing drugs for refractory sprue? Or am I misunderstanding... -

The What's For Dinner Tonight Chat
GlutenFreeManna replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Well hubby gave me his cold, so we've been living mostly on chicken and rice noodle soup. Today I'm FINALLY feeling better so tonight I made a hash with turkey kielbasa, potaoes, bell pepper and onions. -
ARCHIVED Perfect Gluten-Free White/sandwich Bread
GlutenFreeManna replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
You probably already did this but just in case, I wanted to respond. I was the one that let my bread rise for an hour. gluten-free breads are not the same as gluten breads where you can just let them rise a little longer and no harm done. gluten-free breads often will collapse once you pull them out of the oven if they rose too high during the rise time... -
ARCHIVED Advice Please
GlutenFreeManna replied to lemontree1's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
With those positive tests and a bad reaction to trying to reintroduce gluten, I would consider myself diagnosed with celiac if I were you. I have both an intolerance to gluten and an allergy to wheat. The wheat allergy was not revealed by the skin prick test, it was revealed by IgE allergy blood tests. My skin prick test was negative, however after leaving... -
ARCHIVED Help! Still Not Feeling Better!
GlutenFreeManna replied to klahusen's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
So what are you eating? Did you make your house gluten-free or at least change out the things most likely to cause cross contamination? (toaster, collander, scracted non-stick cookware, etc) Do you have pets or kids or a significant other that still eats gluten? -
Yes wheat is one of the grains with gliaden as a protein. Just so you know, food intolerance testing is not very accurate. The best test for a food intolerance is your own body's reactions when removing that food for a set time (usually a month or more) and then trying a little to see how your react. The tests for celiac are much more accurate (especially...
