ARCHIVED Kroger Brand Giving Me Trouble?
GlutenFreeManna replied to rana's topic in Gluten-Free Foods, Products, Shopping & Medications
I haven't had Kroger brand but I have definately had reactions to meat with a solution added. Don't know that it's a gluten thing. It could just be that our systems are more sensitive once we go gluten-free. I get grass fed beef and free range organic chicken as much as possible. It not only makes me feel better but it tastes better too! Check out the... -

ARCHIVED Living With Three Roommates Who "understand"
GlutenFreeManna replied to bridgetm's topic in Coping with Celiac Disease
Raven has an excellent idea. Living with roommates tha have different expectations on cleaning can be hard even if you didn't have gluten intolerance. Just having issues with their level of cleanliness can cause a lot of tension. I would do as raven suggested and keep a dish pan for your dishes so you can wash them with your gluten-free sponges/dish towels... -
I just use the big bags from my Asian food store (I can't think of the name). I also have bought Mahatma or Watermaid brand rice when I can get it cheap with coupons. I rinse my rice well and have not had a problem.

ARCHIVED Flatbread Dilemma
GlutenFreeManna replied to Marilyn R's topic in Coping with Celiac Disease
Yes, write a review! I encountered a bakery once while traveling that advertised gluten-free stuff but also had gluten stuff in the same case. When I asked them questions about how their gluten-free stuff was made they said that the gluten-free stuff was made in the same pans/with the same equipment and int he same kitchen as everythign else. Then they... -
Rice cakes with PB and jelly are better than gluten-free bread to me and they are cheaper too. I eat gluten-free cereal (chex) as a snack without any milk--get the flavored chex or mix several types of chex and make your own chex mix. You can also do trail mix from cereal, raisins, gluten-free pretzels, sunflower seeds, banana chips, etc. Buy or...

ARCHIVED How Long After Gluten Before Reaction?
GlutenFreeManna replied to Staceyshoe's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Staceyshoe: It does sound like a very clear reaction. My reactions take anywhere from 24 to 48 hours to manifest themselves so his delayed reaction is normal as others said. -
ARCHIVED How Long After Gluten Before Reaction?
GlutenFreeManna replied to Staceyshoe's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Calm down! Sounds like they didn't have the positve tests to prove he has celiac so they were testing it via dietary response. Lots of people here have to do that when they are trying to figure things out. I'm sure they plan to keep him gluten-free for good now that he has a clear reaction. No need to accuse people of poisioning their kids. ETA: This... -
ARCHIVED For Those That Are Gluten Free Oat Intolerent
GlutenFreeManna replied to Roda's topic in Gluten-Free Foods, Products, Shopping & Medications
Interesting! I have not had any trouble with King Arthur gluten-free flours but I had reactions to Bob's Red Mill products which I attributed to the gluten-free oat CC. Now I am wondering if it's actually due to Quinoa CC instead since I know Bob's process gluten-free quinoa as well (my reaction to quinoa pasta was very violent, worse than gluten). -

Salsa Chicken, cilantro-lime rice and salads with croutons (made from the rest of Simona's gluten-free bread). -
Chocolate babka sounds wonderful! Sorry to report that this bread completely crumbled on me today when I tried to slice it. So it was impossible to use for french toast or anything else except croutons or bread crumbs. I made croutons out of the remaining half of a loaf. I sprayed with olive oil, sprinkled with kosher salt, garlic powder and Italian seasoning...

I agree with that. Money is tight but that's not why we can't go. Hopefully hubby will just call a few people and tell them he has a work thing that week and try to find out if they really said they were coming. -

You would think they would right? Nope. They chose Florida (where no one lives). We have showed her the beach houses that are near here (Sandbridge beach in Virginia is great!) and discussed many times that it would be great to reserve one for a big reunion or holiday sometime. I'm so over this. Not even sad since I don't know most of the family members... -

I don't know whether to be flattered or blush that you were thinking of me while in the shower. Hubby's going to call some other family members tonight and find out if they agreed to the dates. According to MIL the week they chose was the one that worked out the best for everyone else. I don't understand how she got consensus that fast however... -

Karen--that's how I learned to make chickpea flat bread--in the oven. Never tried adding all those optional things. I usually make mine when I make lentils or rice dishes. -

ARCHIVED So Deliciuos Coconut Milk
GlutenFreeManna replied to GFreeMO's topic in Gluten-Free Foods, Products, Shopping & Medications
It does not have a strong coconut flavor if that is what you are wanting. I like it because it doesn't make everything coconut flavored. If I want a coconut flavor I will use canned coocnut instead (which still is barely noticeable in baked goods such as cornbread). If you ar elooking for somethign in betweent he canned coocnut milk flavor and the coconut... -
Yes I made mine by mixing by hand as suggested by Simona. It was hard work but I managed to get it mixed up well. I made two small braided loaves with only three threads in each bread. I had never made challah bread before so I didn't want to get to complicated with four or six threaded braids. The dough was not hard to work with as long as you had lots...

ARCHIVED Flatbread Dilemma
GlutenFreeManna replied to Marilyn R's topic in Coping with Celiac Disease
I'm also wonderign what they mean by "cultured brown rice flour"? Is that flour that has been soaked or something? Perhaps that's where the moisture comes from? ETA: Okay I googled and that IS what it means. The flat bread is essentially a sourdough. Here's a step-by step for making cultured brown rice flour: Open Original Shared Link A cup of... -
ARCHIVED Flatbread Dilemma
GlutenFreeManna replied to Marilyn R's topic in Coping with Celiac Disease
If that's the whole ingredient list then I would assume they also add water and just don't list it as an ingredient. That is a little strange however!
