  1. Are you only being tested for allergies or are you being tested for celiac disease? Celiac is not an allergy and typically allergists don't run the celiac panel. You need to see a gastroenerologist for that or in some cases your regular dr can order the test (may depend on your insurance). If you are being tested for allergy to wheat only then you don...
  2. I'm surprised RR uses that much flour too! What do they use it on? and when you say it was being portioned "up front" do you mean like out in the restaurant or do you mean the front of the kitchen or something? That's dangerous for us if they are portioning it out where it could be flying in the direction of a table that could have gluten-free customers...
  3. I also really like to put cajun seasoning on popcorn. I mix up my own version which is similar to this recipe: Open Original Shared Link
  4. I make Kettle corn on the stove top. Put enough oil to coat the bottom of the pan and place one or two kernals in it as it heats up on medium heat (the number 6 works best on my stove). Stay by the stove. When the test kernals pop put 1 Tablespoon of sugar in the center and swish it around quickly to evenly distribute it throughout the hot oil. Then quickly...
  5. Open Original Shared Link The above link will explain all the blood tests. Print it out and highlight the test names to take to your dr to make sure they do them all. Some drs will just do one test and call it the "celiac panel". It is better to get all of them to have a sense of what is goign on. Also take a copy to the lab when they draw blood and...
  6. I think we need to have her cater every party from now on! Except I'm allergic to pork and shellfish and can't have most fish sauces...but her sauce does sound good. If I ever find a fish sauce that is shellfish free I will have to try making it.
  7. Make sure they biopsy the clear skin NEXT TO the legions, not the legions themselves. And, yes, they are looking for antibodies similar to the blood tests.
  8. They have been trying to pass legislation for years. The FDA recently asked for comments on the bill if you want to read it and give them your imput. Here's a thread:
  9. How do you make your beef stew? I have never seen milk in plain meat (and I know because I have a milk allergy). However if you used canned beef broth some brands do have wheat in them. This does sound like an allergy. If your allergy tests all come up all negative then you may need to try an elimination diet to figure out which foods are bothering you...
  10. Wow, thanks for sharing that! I had no idea the slices were bigger. I have been meaning to try eating at Jason's Deli but I avoided it because the thought of paying so much for a tiny little sandwhich I can make myself was depressing. I figured the slices were the same size as the store bought Udi's. Now I will have to check out Jason's Deli!
  11. I thought I was coming to YOUR place tonight?!? I'm bringing the food you have the drinks remmember? The sauce does get hotter the next day that's why I cautioned peopel about adding extra red pepepr flakes--it's easy to go overboard on the heat. This sauce is so yummy I can eat it with a spoon and nothing else. It makes a good coating for chicken...
  12. Here you go: If you are looking for any other recipe ideas just ask or browse the recipe section of the forum. Or check out the what's for dinner thread.
  13. Thai Spring Rolls 1 pound ground meat (I have used chicken, turkey, bison, or lean ground beef) 1 teaspoon ground ginger OR 2 tablespoons minced fresh ginger (fresh is best but powdered does okay) 3 cloves of garlic, minced (you can use 1 and 1/2 Tablespoons of the jarred stuff to save time, I don't reccommend garlic powder) 3 cups coleslaw mix (shredded...
  14. I don't really miss any food. I just miss the convienence of being able to go out and pick something up. Who wants to start a 100% gluten-free fast food restuarant chain with me?
  15. Testing is not required of course, however it is better to get it done BEFORE going gluten free if you ever plan to have testing done at all. You must be eating gluten in order for the antibody tests to show up positive. If you are gluten-free the test will be negative. You could also be gluten intolerant and show up negative however--in that case, going...
  16. You may want to get a mandoline in order to make thin enough slices that are even. A deep fryer helps but you can also make them in a shallow pan of oil or in the microwave (see second recipe) Open Original Shared Link Open Original Shared Link I have made them on the stove a few times but I don't have the will power to not eat them as soon...
  17. Have you had your vitamin levels checked? Vitamin deficiencies such as D and B12 can cause memory issues.
  18. Instead of ramen buy rice noodles or just rice. Rice noodles at an Asian market are cheaper than gluten-free specialty pasta and are made in a similar way to Raman--just a pot of hot water for a few minutes and they are done. Add a bag of frozen steamer veggies and some meat or beans or egg and you have a complete meal. If you used to eat raman as a noodle...
  19. As long as you don't mind the huge increase in the risk of cancer, additional auto-immune diseases such as Hashimotos and diabetes, and refractory celiac (celiac with symptoms that do not respond to the gluten-free diet). You are free of course to make your own decisions. No one can make you stay gluten-free but It's really not worth the risk, IMO....
  20. It is very possible you have additional food intolerances or another condition besides just celiac. If the biospy was positive for celiac however that is very accurate. There are not really false positives from what I've read. Since it's been two years I think it's time to get retested and see if you have healed. If your biopsies are clean this time then...
  21. I really like King Arthur multi-purpose flour. I mostly use it for their pizza crust recipe but recently I made gluten-free popovers with it and they were Amazing! As far as the milk powder I wonder if there is a substitute that would give the same properties that milk gives? Maybe almond flour for the protein? or powdered eggs or gelatin? I'll have...
  22. The corn ones are SO easy to make and much, much better than the store bought. I had a friend over for Mexican once that said he was so glad I could make gluten-free tortillas because he didn't like corn tortillas--as he was complimenting me on how good my homemade tortillas were. Then I had to break it to him that he was eating CORN tortillas! LOL. Changed...
  23. "It is a blend of flours from white and brown rice, tapioca and potatoes, with potato starch, cornstarch and milk powder" Too bad about the milk powder. Those of us unable to have milk won't be able to try it. It actually sounds similar to Pamela's baking and pancke mix which has milk in it too.
  24. So learn how to make the BEST southern food you can gluten-free! Seriously. Become an expert at making steak and potatoes. They don't have to be boring unless thats what you like. Make BBQ sauce so good people want that recipe. Learn to make the BEST southern style cornbread (gluten-free of course), potato salad, coleslaw, Southern greens and pulled...
  25. I've had to pass up a few family holidays too. We didn't go to see my husband's family for Easter this year and they were pretty upset. HOWEVER, if I know that the people I'm with won't try to make me eat things they make then I will go and take my own food. My side of the family is pretty accomodating (meanign they don't force food on me or lie and say...
