  1. You're very fortunate if your reactions only last for 24 hours. Mine last a week at minimum, up to two weeks. And the last time I had a large amount of gluten on accident I ended up getting brochitus which turned into pnuemonia, requiring several pricey breathing treatments at Urgent Care, chest x-rays, consult with a pulmonologist, etc. I was sick for...
  2. Picadillo and Cuban black beans and rice.
  3. That sounds more like an allergic reaction which still involves the immune system but it is not the same type of response as an autoimmune disease response. I am allergic to pork but it was a mild allergy the last time that I had a reaction--my throat felt a little puffy after eating pork products. My allergist said that if I have a mild allergy and keep...
  4. Thanks! Perhaps I will try that method to make this bread. I am hoping to get a stand mixer for Christmas this year so if I have to I can wait to do it right.
  5. Was the buttermilk pure buttermilk or did it have any additives? Perhaps you are reactign to the acidity of the buttermilk and also the vinegar in the ricotta. Do you have other things with vinegar without any trouble? It could be a problem with milk even if you don't have it will ALL milk products. When I was still able to eat milk (before allergic...
  6. That looks wonderful! Question, do you think I can make this if I don't have a stand mixer? I only have a little hand mixer. Is the dough very hard to mix? Would it burn up my motor on my little hand mixer? I am very tempted to try. You are making some amazing things!
  7. Chocolate covered for sure. The maple ones were too sweet for me and I also got a headache (I figured it was the sugar rush). I have not seen vanilla and not tried the cinnamon.
  8. As you have discovered the hard way gluten sensitivity can be just as serious as celiac. Many of us do become more sensitive after going gluten free. Also if you keep cheating you are more likely to develop other food intolerances. Check out the "what's for dinner?" thread over in the recipe section of the board and you'll see people eat a lot of different...
  9. Just putting something in your mouth is enough to gluten you. You don't have to swallow it. Without asking you can't know if the chicken had some flour mixed in with the sauce or soy sauce with wheat in the tequila marinade. Also if there were a lot of things at the party that were gluteny you could get sick from cross contamination a bout a dozen ways...
  10. Please, please get some help if you are thinking this. This board is a great place to rant and rave but don't let it be your only source of therapy.
  11. Sounds like it might be your oven. I have used KAF and I've always followed the recipes with the time they gave and things turn out great.
  12. $600 for a tow!?! That's insane! That was a very nice construction guy though to help you. And what a talented (and strong?) cat he has that knows how to push rocks around! I wonder what he feeds it? Really, I'm just glad you are okay. Is it really safe where you live to go hiking in the woods alone?
  13. I once read a very good anology to explain it. Think of your immune system as a huge army defending your body from foreign invaders (gluten). When you were eating gluten regularly your body was under constant attack so your immune system was spread out and always taxed from trying to fight of the gluten. When you stopped eating gluten suddenly the immune...
  14. Is there any way you can get more sleep? Five hours is not very much. The average person needs 8 hours to function properly. Your diet looks fine to me as far as what you are eating. You have meat, fruit, veggies and carbs. If you're hungry eat more protein and good fats. The only thing I wonder about is your intake of cheese. Since your signature...
  15. And whilst waiting for the story I just have to share that I am NEVER flyign again! Apparently it is now "suspicious behavior" to use the restroom twice in a single flight. Open Original Shared Link
  16. Oh my! I can't wait to hear the story. Why were you in the forest without a phone? Run away chicken led you on a wild chase? Hiding a body and don't want to be tracked via GPS?
  17. You've posted something similar to this before. I'm really concerned about you. If you keep thinking about hurting yourself, please get some counseling. We all go through a process of grief and it's perfectly okay that you are angry and missing your gluten foods. However, you seem to be dwelling on what you can't have so much it is preventing you from...
  18. I personally would not risk it since the stone is porous and absorbs things with use. Get yourself a new one and gift that one to a friend or family member that doesn't have to eat gluten-free.
  19. You said you are lactose free but are you still consuming other dairy products? Casein could be the problem not just lactose. I would eliminate all dairy if you have not. Also have you tried to keep a food and symptom diary to see if you can figure out what is bothering you on the days you don't feel well? I was also hospitalized several times and...
  20. Manna is the bread from Heaven that God fed to the Israelites when they wandered in the wilderness. They grumbled and complained to God about missing the things they used to eat while in Egypt. Instead of sending them back into the slavery of Egypt so they could have the foods they longed for, God gave them manna and quail. In Deuteronomy 8:3 it explains...
  21. How about a spinach pesto? Here's a recipe to give you an idea: Open Original Shared Link
  22. For the counter and anything hard/non-porous you could try some Goo Gone. I've never spilled Xanthan Gum but Goo Gone takes off stickers and gummy messes so it might just dissolve the mess and be easy to wipe away. For your clothes just try any laundry stain remover first--wash but DON'T put in dryer. Air dry first to see if it came out completely...
  23. Well I chickened out. We tried to go there about 4 PM yesterday thinking maybe it would not be too busy that early. There was a line out the door however and they had onyl one person on register that looked like she didn't know what she was doing (looked like she was new/being trained). When a guy rushed up front, saw the line, looked frazzled and then...
  24. Perhaps you could try making the peanut sauce with sunflower butter instead? If you try this please let me know how it turns out! You can also look for an Asian chili sauce that is gluten-free. I tried one once called Maggi (sp?) that was soy free and gluten-free. It's like a spicy/sweet ketchup. It's been a while since I've been able to find it in...
  25. There are no blood tests for gluten sensitivity. There are only tests for celiac disease and those tests have a high rate of false negatives. Therefore the adults profiled there (as well as you) could possibilly have celiac and still test negative. The only test for gluten sensitivity is the test you have already done. You eliminated gluten and your symptoms...
