Just go and get the bloodwork done. That way if everything is normal you know you are doing a good enough job and can continue to relax. If you're antibodies come back elevated then you know you need to knuckle down again and be more careful. -

There's very little fiber in that diet. How about adding some more fruits and veggies? Try cutting out all the gluten-free replacement foods and eating meals that are naturally gluten-free instead. With that much processed food anyone could feel bad. -

Have you been tested for diabetes or other blood sugar problems like hypoglycemia? After that much sugar anyone's blood sugar would crash. Most people woudl want to sleep but if you felt like you absolutely couldn't stay awake it may be dangerous. Get to the dr ASAP if you notice this happens with other sugary foods. I used to get a brand called Mother's but I haven't been able to find them in my stores lately. They are marked gluten-free and just always tasted better to me than the other brands. Now I buy Quaker or my local store brand now (Farm Fresh's brand) as both are labeled gluten free. There are lots of options besides bread and rice cakes to put PB on however... -

That's good news if they have no symptoms right now. It does not mean, however, that they cannot develop celiac or gluten intolerance in the future. Be sure to have them tested every few years. If either of them have symptoms (sorry I don't recall if they do) you should consider trialing a gluten-free diet anyway since the testing has a high false negative... -

Is she eating more dairy? Perhaps she is lactose intolerant? Also she could be gluten intolerant and not know it. Some people have no reactions until they remove gluten. Often people will have another food allergy/intolerance that shows up when they go gluten free. Just because her reactions are different than yours doesn't mean it CAN'T be a gluten... -

Sounds like you may be allergic to wheat. I get hives from lotions and other personal care products with wheat in them. Don't hide it but don't make a big deal about it. Order as you normally would to avoid gluten and dairy. If asked directly by the boss you can explain that you have food "allergies" (or say celiac if you think they might know what it is) but it's no big deal and then change the subject by asking a question about your new job.
