  1. Hello Jen, There are so many possible health conditions that can develop from not following a strict gluten-free diet. From other auto-immune diseases to cancer, his risk of poor health int he future is great if he doesn't stay gluten-free. Your husband may have none of the symptoms currently OR he may have some that you don't even realize are symptoms...
  2. I replaced things gradually as I could afford it, but I was careful not to use anything that could be contaminated in the mean time. For pans I bought one good skillet and one good pot at first for gluten-free only. I just avoided using the wooden spoons at all (used metal or silicon spatualas instead), put a piece parchemnt down on the cutting board to...
  3. Get rid of the pot, but you can get by with just lining the cookie sheets with foil or parchement if you want.
  4. Type the cities you are visiting into glutenfreeregistry.com and you will find some lists of gluten-free restaurants/stores as well as reviews. Of the places you listed I have only visited Bloomington, IN. I remember they have a large farmers market where you can get tons of fresh produce. There is also an organics store there called Bloomingfoods...
  5. Steak with Marsala sauce Oven roasted rosemary red potatoes, onions and bell peppers Steamed green beans with garlic
  6. I'm making Banana Bread this morning!
  7. No, I haven't been there. Thanks for the suggestion! I think I had read about them a while back but I thought they were more of a bulk organics store. I didn't know what they had for gluten-free items. I can find Udi's bread in many stores now (Trader Joes, Bloom and Farm Fresh), but had not seen the new Udi's buns anywhere except for Navan. I wish I...
  8. It depends on where in Europe you are traveling. I can't comment on specific place (have not been to Europe since before going gluten-free), however I know I have read on here that some countries are better than others when it comes to eating gluten-free. In general, I would go with places that have a gluten free menu over places that don't. If you are...
  9. We're having stuffed bell peppers (stuffed with ground turkey and rice and seasoned with Italian spices, baked in the slow cooker).
  10. I had a banana and piece of Rudi's toasted with peanut butter.
  11. I'm really not much of a crier. Only time I cried often was when I was on gluten and very sick from it. For a while there I would cry over everything-- sometimes I would just sob uncontrollably and have no idea WHY I was crying. I don't do that anymore. About the only thing that makes me cry is the death of a loved one. I never cried at weddings or sad...
  12. Enjoy Life bars and Lara Bars are the closest I can get to a candy bar. Snickers use dot be my favorite but it always made me sick--I assumed it was the soy and dairy however. Fortunately, I don't have much a sweet tooth. I prefer salty snacks most of the time. If I want something sweet I often make kettle corn on the stove--just popcorn kernals, oil...
  13. My memory had gotten to the point where I could not read a book. I would forget what I read as soon as I read it and get lost in the words if the sentence was too long. I couldn't look at an adresses or phone number and remember it for ten seconds even if I focused very hard. I didn't remember dates or even what day it was. There is about a 2 year window...
  14. To start, make a list of the meals you already make that are naturally gluten-free. You may be surprised to find there are a lot of them! Here are some simple things off the top of my head that can be naturally gluten-free: Chili--make your own seasoning rather than using a packet and watch out for gluten in tomato soup if that is an ingredient in your...
  15. I really felt bad I didn't buy more when I went there, but I just don't eat very many gluten-free processed items. They are more of a treat or for traveling and stocking my emergency food bag. For example, I've been gluten-free for 18 months but I have only bought gluten-free pretzels 3 times in all that time--the first time was to test them and make sure...
  16. I wans't sure where to psot this so mods please move if it's in the wrong place. Just a heads up for anyone who travels to Virginia Beach to visit Navan foods Allergy free store. They closed their store last week. According to the website she will still be selling things online. I'm so sad to see it go. I could get almost anything specialty gluten...
  17. Thankfully I CAN have nuts, all kinds. I will have to keep that one in mind for next time. I already made my fish. I ended up squeezing an orange over them, splashing some white white on, spraying with olive oil, topping with minced garlic and ginger, fresh ground pepper and kosher salt, then baking in parchement. Turned out pretty good for not...
  18. I wish I could take credit for the rice idea. I ate it in a restaurant once (can't remmember where now) and I've been hooked on it ever since. Glad to be of some help though!
  19. I make spring rolls quite often when I want a portable cold lunch. I usually just fill them with leftover stirfry with some raw carrot shreds or cabbage for crunch. I've tried making egg rolls a few different way--both brushing with oil and bakign and frying in oil. The frying in oil ones fell apart and didn't really work for me. The oven worked but it...
  20. I will definately do it in parchement paper and I was thinking of doing something with citrus. Mushrooms are out because I'm allergic. I like the idea of a pesto-- I had not thought of doing pesto on fish. I make one with spinach and almonds that is great on chicken. I will probably decide at the last minute. Thanks for the ideas!
  21. Alaskan Pollack --haven't decided how to make it yet so any ideas are welcome--otherwise I will probably just bake with some lemon pepper seasoning. Rice with craisins and rosemary Steamed broccoli
  22. Most restaurants are not using cast iron. They are usually stainless steel (which can be scoured clean) and will get a clean pan for each meal they make. But, yes if a restaurant were to use cast iron or a non-stick with scratches OR to grill your food on grills previously used for glutened food your food has a big risk of being contaminated.
  23. If I'm understanding you correctly then you were tested after being gluten-free for a year and half? If that is the case then it's no woder that you had negative biopsies! I think it may be time to do a gluten challenge for 2-3 months and get proper testing redone. You need to eat the eqivalent of 3-4 slices of bread everyday for 3 months to get accurate...
  24. Some of us find out we have a secondary intolerance once we go gluten free. Soy is just one that seems to be common. Dairy is another common problem some peopel have at first. Lay's Wavy potato chips are gluten-free and soy free. There's also a brand called Food Should Taste Good that has some gluten-free and Soy free varieties. Many brands of corn chips...
  25. Sorry, but your dr is ignorant and wrong. You need to be consuming gluten for the antibody tests. Show her this: Open Original Shared Link Before giving it to her, take a marker and highlight the part on the second page that says "Antibody tests are only accurate when a patient is on a gluten-containing diet. Those concerned about celiac disease are...
