  1. Does the walmart brand contain mixed tocopherols? I know that Rice Chex does. Those can be derivied from soy or from other sources. Perhaps you are reacting to the soy in Rice Chex? I'm super sensitive to gluten but I'm not super sensitive to soy. I can eat things with mixed tocopherols as long as I know the source is NOT gluten and I only eat them once...
  2. I lost 20 lbs my first month. I had it to lose however, as gluten makes me gain weight instead of wasting away. My weightloss stopped when I added carbs back into my diet (I had cut out all grains and all sugar as part of my elimation diet).
  3. It's also important when you plan your meals to know how long things will stay fresh. Here's a website for figuring out how long you can safely store things: Open Original Shared Link
  4. Your best strategy is to meal plan and shop frequently. When your diet consists of mostly fresh stuff you can't buy a week or two weeks worth of food and expect to not be throwing a good bit of it out. 1. Figure out what you are having for JUST the next two-three days and shop for those days only. 2. After 2-3 days re-evaluate what is left in your...
  5. Have you tried cutting out dairy or soy? Those are common sources of cramping/pain. Also since you are new to eating gluten-free your body may just be adjusting and your digestive system can be really sensitive for the first 6 months to year. Some things that were hard for me to handle early on were: beans, raw veggies, nuts, too much fruit and processed...
  6. I don't have a clue how to cook low sodium but there are lots of cookbooks out there. I searched on A M A Z O N and found one titled "The Complete Idiot's Guide to Low Sodium Meals". It had good reviews. Perhaps something like that would help?
  7. That sounds wonderful! I'm making stir-fried beef and broccoli and mashed poatoes. They don't go together at all but I'm trying to use up the food that is left in my freezer and pantry in preparation for a move.
  8. I agree with the others. Don't let the dr talk you into a gluten challenge just to get a label. What would you gain from an "official" diagnosis? Some people in the US have even avoided getting diagnosed because they don't want to risk losing insurance. There's no upside as far as extra treatments or medication if you get diagnosed with celiac--since...
  9. I'm going to diagree with the others but only because cheating on my gluten-free diet would completely ruin what was supposed to be a fun and happy day for me. If your symptoms are not that bad and you think you can deal with it then ignore my advice and do what you have planned already. That said, if it were me I would have a special gluten-free meal made...
  10. Oh, excellent idea! Does Mulberry fly? My handwriting IS like chickscratch so if she's not up to flying I can just mail my posts for her to peck out on the computer.
  11. I react to soybean oil but my reaction is different than the reaction I get from other soy products. I get an instant migraine with soybean oil. Other forms of soy make my stomach hurt, give me fatigue, joint pain and joint swelling. I had a PA tell me one time that I should be able to tolerate soybean oil because of it not having the proteins, but everytime...
  12. Wow! Maybe I just need your mom to call my utility companies for me and threaten to break hell loose on them. Glad it went well and hope she's feeling better now. I think lighting fires for a smoke signal may be against the HOA rules at the new place. Would also be hard for you to see since we are getting lots of smoke here already from the wild...
  13. A burger on a Udi's bun. Bad I know, but I did eat it around 10 AM and didn't have any lunch so I consider it more like brunch. Now I'm making some sweet potato fries for a 3 PM linner or should I call it dunch?
  14. Sorry to hear your mom was in the hospital! I hope you were able to smuggle a burger into her to prevent hell from breaking loose. If not, maybe that's why I'm having such trouble with the utility companies?
  15. Hey Psilies! Mulberry IS one adorable chicken. I'm just stopping by quickly as I'm in the midst of preparing for my move next week. Just needed to blow off some steam! What is it with utility companies trying to up the bills when you move? All I want to do is transfer everything to the new address without a rate increase. I understand there may...
  16. I heated them in the microwave for 30 seconds prior to use and they became as soft and moist as I remmember plain white buns to be. Without any heat right out of the package they do feel like a stale dry bun. I would not eat them without heating first.
  17. If you are in the US, Mission brand corn tortillas are gluten-free. They are not tested but they are made on lines used only for corn products. I also sometimes make my own corn tortillas using MaSeCa brand masa harina.
  18. I think a good sub would be another type of bean flour like garfava (garbanzo and fava) or white bean flour. That said, bean flours tend to have a very distinct taste and people either really like them or really hate them. If you want the high protein maybe you could try almond or coconut flour but I have no idea what that would do to the recipes.
  19. Hide the keyboard and mouse but also password protect your computer so random people can't use it. Your company should be supportive of a password anyway if you are using this for company information that should not be for public viewing. You could also use a screen saver that has words on it to get a message across. Maybe "NOT FOR PUBLIC USE" would keep...
  20. That is the same recipe I use and I have never have trouble with it being doughy or soggy but I do pre-cook it for 15 minutes instead of the 8-10 it says in the directions. I brush the top crust (around the edges) with extra oil when it come out the first time. You can also improve it by not using a watery sauce. My crusts cook much better when I make...
  21. I agree with you that many other things respond to a gluten-free diet, but the difference is that if she has another autoimmune disease or something it can be tested for while off gluten and treated while off gluten. Many people have celiac AND another autoimmune disease or another health issue. The OP was not asking what to tell her future DRs or people...
  22. My guess is that they are made on the same lines as their multi-grain chips which contain wheat. No way to know unless you contact them however.
  23. I don't know the answer to your questions but I'm very curious to know where you read this research! Do you have a link to post or can you tell us where you read that?
  24. That says a lot coming from YOU! I had low expectations to be honest, because while Udi's bread is edible to me and makes a decent toasted sandwhich I think it's over-rated by fans on this board. I really prefer Rudi's for pre-made bread. I have made homemade that tasted better right from the oven, but I don't like to go to the trouble of making bread often...
