Any allergy can get worse at any time. Best thing to do is to avoid bananas and latex until you can get to see a dr. If it's an allergy then it won't matter if you stop eating the food as far as testing goes (unlike celaic testing). They will do skin prick and possibly blood tests to test for an IgE allergy. If nothing shows up in the tests the next step... -

I have used Mission brand corn tortilla--spray with oil and heat in oven. Even better however is if you can make your own shells. Get some MaSeCa brand Masa Harina (corn flour) and follow the directions on the bag. It's nothing more than mixing the masa with water to make a dough. The above three would be top on my list. I'll probably never be able to have even gluten-free versions however as croissants and puff pastry depend on layers of butter and I cannot have dairy or soy. I develop hives from touching it too. However I found out this year I have an allergy to wheat in addition to the auto-immune reactions when I ingest it. Chicken pot pie Crust was good (Bette Hagman's recipe), filling was just okay. I was going from a recipe with dairy in it and converting it to make it dairy free/soy free as well as gluten-free. Still needs a little tweaking. -

You can try substituting but, no not all gluten-free "all Purpose" flours are the same. You may have good results if the ingredients are the same for both flour mixes, the ingredients can vary widely. It's best to stick with a recipe written for that particular flour brand (when talking about mixes not individual flours), especially when you are just learning... -

Right. I guess I should just say people that do things when they don't know the reasons behind doing the things they do bother me in general. They saw some celeb mention gluten-free and they decide to try it without even knowing what gluten-free means. I do think a lot of people confuse it with a low carb diet too and think it just means not eating bread...

I think that IS different. Ordering the diet soda with the pizza has some "advantages" in their mind. Whether there is an actual health advantage or not is a different question,but it does cut down on calories or sugar in their total meal. What is the so-called advantage of cutting back on gluten but not eliminating it? They should call it a low carb...

I only get upset at the people that claim they are gluten free and then turn around and eat something with gluten. I don't care why they are gluten-free, I just want them to be serious about it/educated about it.
