  1. Hi Mark, welcome to the forum. I would switch to a new doctor (if he still refuses to order a Celiac Panel after a call to his nurse or M.A. demanding a test.) I frequently remind my doctors to run celiac labs even if their patients don't have gastro issues. One of them ran a panel on a patient who had excruciating back pain with no other symptoms after...
  2. I was chopping up veggies for soup today while watching the Food Network. Saw this and was inspired...had to share. Open Original Shared Link
  3. Ugh. Amy's zapped me bad on an Indian entrée labeled gluten-free. Won't ever be tempted to buy hat brand again. Others on the forum haven't had a problem with Amy's. If you like Mexican and convenience, Frontera brand sauces in the packets are the bomb and I've never had a problem with them. It is only slightly more work, but much tastier, and better ...
  4. If you go to the library, see if they have any Paleo cookbooks. My niece bought me "Well Fed", which I enjoy, but then again, I love cabbage and brussel sprouts, can eat cold plain steamed broccoli and be one happy camper. Like Laura, I learned better cooking methods from library cookbooks, but got frustrated with most of the gluten-free cookbooks. ...
  5. Safe sweet potato fries: Scrub 1- 2 sweet potatoes. Microwave for a minute, or boil for a couple of minutes (thanks, Karen G.) Because you're fatigued, sit down at your kitchen table with a cutting board and sharp chef's knife. Cut them up in the size you like. Meantime, heat your oil if you're frying, or your oven if you're baking. They taste...
  6. My thoughts: Buckwheat should be ok. Marahoochee probably ok. Soy may have been the culprit if you were using it on the new grains you tried. Whole foods should all be ok on your diet (meat, veggies, fruits). Have you searched the forum about cross contamination? That might be something you'd like to look into. Good luck. I had a reaction to quinoa...
  7. Not much to add due to the good responses already. Regarding the oil for your sweet potato fries, if you had previously fried foods with a wheat flour coating (like fish or chicken), your fries were probably contaminated. Have you tried baking them? You can use parchment paper on your old cookie sheets....they're yummy!
  8. I'd go for the biggest bag of rice you can afford, some celery, onion and dried beans and/or peas, big bag of carrots. Curry powder if you don't already have it. I don't know if carrots are cheap here, but they are the best buy around here. Good luck!
  9. Indoor (George F) grilled veggies:, tater, cauliflower, carrot, zucchini, onion and pea pods with lemon juice and sweet curry powder. I had a piece of bacon in there, but my part time dog managed to snag that from me. He looks like a baby seal when he pins his ears back and asks me if he can please, please, please have just a wee little bit of bacon, pretty...
  10. I sincerely hope you invited her to go enjoy herself at the Chinese restaurant . That was very inconsiderate of her, especially since she knows what you're going through. Your husband's right, you're right, sister is all wrong in this instance,
  11. I still have those nightmares, but not as often. Mine usually revolve around the grill, a party and big fluffy buns, and I stick a nice burger on a bun by mistake.
  12. I personally don't have a problem D wise with unpeeled zucchini or vodka, but not everyone every one is the same. Good luck. (I have, by the way had both in the same weekend.)
  13. One of the top exec's at the company I formerly worked with used to call the hotel/caterer ahead of time and ask for peaches and cottage cheese for her lunch. Everyone just figured she was sick of rubber chicken and overcooked veggies.
  14. We had venison Ropa Vieja over brown rice with zucchini pancakes (put some jalapeno peppers in there to make them interesting), homemade applesauce and a Romaine salad with balsamic vinaigrette. Miniature Snickers Bar for desert. I was bootscootin' happy to find out I do not have diabetes!!!!!
  15. Thanks Karen & Notme, I got a good laugh today when I called my 87 year old aunt to wish her a happy Labor Day. She was getting ready to mow her 3/4 acre lawn by the way. When I mentioned I might have diabetes, she said "Oh No! That's a pia, you'll have to watch what you eat!" I told her I was pretty used to that, and could cope with...
  16. Well, I modified it. I nuked the sweet tater for 2 minutes. I'm not sure which is worse, hard chopping or hot fingers, lol. I find out Tuesday or Wed if I have diabetes on top of gluten intolerance and Lupus, so I had to have my taters tonight. I think I probably have it, bubbles in my urine, blah blah blah. Keep 'em fingers crossed for me...
  17. My German Pinscher and part-time (neighbor's) dog are ready and willing to go help out anyone with finicky cats. Regrettably, neither one of the doggies are very friendly toward cats. They shovel up the left overs though, even cabbage. Heidi Ho loves anything with tomato in it. Arnold will eat positively anything except corn chips. He vacuums...
  18. Tonight was a really good salad, sliced smoked chicken, and home made oven fried FF and sweet potato fries. Thanks to Karen G, I didn't struggle slicing the sweet potato this time. Thanks, K.G.
  19. Deconstructed cabbage rolls with half of the 22 meatballs and sauce I made yesterday. Go me!
  20. Yo DC, you otter give your poor cat a rest.
  21. I e-mailed my family too. Gave them the statistics of having 2 first degree relatives with celiac disease, etc. My brother is soooooo symptomatic. He's one of the smartest people I know, but he's in complete denial. I've mentioned it a twice when face to face, but I won't bring it up again. You just let it go. They'll find their own way.
  22. How about a watermelon carved to look like a pirate ship? You can get ideas by googling. I don't have children, but one year I attended an air show party that included quite a few kids. I carved an airplane watermelon, filled it with fruit, and brought a cooler with extra fruit in gallon zip lock bags. (There were about 200 people at the party.) There...
  23. Oh boy, I can relate. My heritage is dutch too, and I cracked up when you described the "heart attack on the plate". However, my family was very supportive about what I could and couldn't eat and didn't try to force feed me. I don't know if this will help or not, but most of the restaurants my family frequented almost always had baked potatoes...
  24. I guess I have brain fog too, since my original msg. said colostomy prep vs. colonoscopy prep. I just edited it.
  25. My roommate bought the Mattar Paneer for me, labeled as gluten-free. I had it for breakfast and 4 hours later it was like I had consumed a gallon of colonoscopy prep, except the prep doesn't make me vomit. There is only one thing that makes me react like that: gluten. I'd had the same entrée about six months ago, and was fine. The only saving grace ...
