  1. Adelaide, that mint is wonderful in a hot bath with Epsom salts if you ever get a chance to take a soak. We had a really nice pineapple today that took 2 years from start to harvest! Lemon grass has gone crazy. Have sage, mint, rosemary and chives. I used to be an avid gardener, but can't tolerate the sun with the darned Discoid Lupus. I sneak...
  2. Thanks for the tips, I appreciate them!
  3. I have to share this, I've tried for months to perfect homemade French fries and after two meals of perfect fries,,, here's how you do it. These don't come out soggy, burnt or yucky. They're delicious. Pre-preparation: Place oven racks at next to the lowest and next to the top of the oven. Line 2 cookie sheets with parchment paper. Ingredients...
  4. We had oven baked French fries and sweet tater fries with a couple of dippers, ketchup and ranch dressing. Mangoes for dessert. Last night I made "Get Rid of it Soup"... all the veggies in the refrigerator, chopped, braised, cooked with lentils, water. smoked chicken, some spices.. I never knew radishes would be so good in soup! I'm happy because...
  5. You want to say goodbye to soy to. There's not a quick fix that I can think of.
  6. Thanks for the Wonder Woman!!!! Wish we were neighbors so I could bring you some mangoes to put on top of that cake, but I'm thinking Mom will love to stick to the tradition of Betty Boop, no matter the flavor of the cake.
  7. Rerun here. Grilled Deitz and Watson Bratwurst, spuds and salad. I made hummus with roasted red peppers and chick peas tonight. I soaked and cooked the beans myself, my Irish griller toasted the red peppers. no cans involved. I feel like I deserve a cape or crown or something.
  8. Hi MxMy, No....no...no...you aren't alone. I was really depressed about it, then really angry (what DID I do to deserve this), and gradually worked it all out. Going to the grocery store was really hard at first. I'd end up in tears before I could check out because of shopping cart envy. Now I look in the carts and think "Those poor sods." Remember...
  9. Lisa and Adaliade, ((( ))) hugs to both of you. I hope everything turns out alright. For dinner here in the deep, hot, south, we had hummus on cucumber rounds, romaine lettuce with chilled smoked chicken and a lemon juice and oil dressing. Desert was water melon balls. Irish sidekick had some redskin potato salad too. He cannot have a meal without...
  10. Big pat on the head and telling you you'll be ok from this corner. Great suggestions posted already... Here's mine... devilled eggs or egg salad, tuna salad (check those labels!) Goulash made with rice pasta (Wally World sells it for reasonable prices). You can freeze it cooked and just have mac 'n cheese for your fussy one. Tuna casserole...
  11. I don't think Epsom salt's are good for your kidneys taken orally. As for soaks, I use the Wally World brand regularly.
  12. My boyfriend (tonight anyway, vs. roommate) made an awesome smoked chicken. We had that with Vodka & tonic, baked potatoes and I have forgotten what else, but dark chocolate for desert.
  13. I LOVE Against the Grain!!! I'm going to have to make a road trip to get some soon! The first time I ate their pizza, I e mailed them and told them it was so good I wanted to slap my momma. Then I explained that was high praise in the south. (They're based in Vermont.) I received a really nice response that the owner was from Georgia, he grew...
  14. Irish, you'll have plenty of critters in Florida, but you won't need to rescue chipmunks!! (You can grow blueberries though!) I made red beans and rice with lots of veggies in the pressure cooker. Served that over rice with grilled bratwurst and salad.
  15. Oh yea. I had a friend tell me that all diseases start with unstable mental health, and I should really see a psychiatrist. I didn't respond, still don't see a way to respond to that. As to your original question, I couldn't tolerate soy, dairy, eggs, or most processed food additives after going gluten-free, I can now, so that was relatively short lived...
  16. You're beautiful, he's a lucky guy. Sorry you're flaring... wish your the best. We had grilled skin & boneless chicken thighs with salad and potatoes.
  17. Brown rice mac 'n cheese. I've got some black seedless grapes, you've inspired me to freeze them LTT.
  18. Leftover Eggplant parmesan. It was still yummy after freezing it.
  19. We had cabbage rolls stuffed with ground venison, veggies and rice. My sidekick doesn't like cabbage, so I served him porcupine meatballs with sauce, and he loved them. Homemade creamed corn, or corn puddin' as they call it in the South accompanied that.
  20. Oops. Forgot to mention when you add the grated cheese. I grate the cheese while the veggies are sauteeing, and put the cheese in with the yogurt and artichoke mixture.
  21. One 16 oz can artichokes, chopped 1 c plain yogurt 1 -2 T olive oil 3/4 cup asiago cheese, grated 1 sm onion, chopped 2 cloves garlic, chopped 1 sm carrot, minced 1 stalk celery, chopped 1/2 a zuccinni, grated Rinse the artichoke hearts in water, drain and soak in the yogurt. Chop the onion, saute over medium high heat until well browned....
  22. Hi Ksee, I think you're doing great! If you've been eating whole foods for quite awhile, you probably don't need to replace anything. If you formerly ate wheat pasta or loaves of bread, you would probably want to replace plastic strainers and cutting boards, your toaster and your silverware utensil holder. (Or give it a good wash.) I gave away...
  23. Your oven is safe. Don't worry about covering food unless it's going to burn. I tried to think of things that would explode containing gluten. Cam't come up with any, they usually spill over. The aromas can't get you either. That's my opinion, though, and I guess I could be wrong.
  24. My situation is kind of the reverse of what you're describing. I broke out in hives if I took any OTC cold medication or any OTC or prescribed allergy medication before going gluten-free. I react to benadryl and a laundry list of other drugs. My girlfriend found out that the source of her hives was artificial sweeteners. She doesn't have celiac disease...
