  3. I think anyone dealing with refractory celiac disease should definitely look into the Specific Carbohydrate Diet. I suppose by the guidelines, I myself would be considered refractory.   5. Oh wow, thank you everyone for your answers! Using olive oil sounds a lot easier, but I will definitely look into the cooking spray for other uses. It could come in handy. I hadn't heard of the sprayers either. I haven't used the waffle iron yet...my diet is so strict (grain free, etc) and I haven't had time to run to the store to buy almond flour. But soon...

  7. Does this even exist? My boyfriend's mother just gave us a brand new waffle iron, and I want to try a recipe for SCD approved waffles. You need to spray the waffle iron, but every cooking spray I've seen has soy in it. Has anyone seen anything different? Could I just brush the waffle iron with olive oil? Thanks in advance!

  9. Thank you! That sounds great. I actually do have a can of coconut oil at home, I keep forgetting to put it in the fridge! Some questions...do I use the entire can, or half a can, etc? And I think I will omit the honey, too much sugar even though it is natural. Could I add blueberries in too? Would it be better to add frozen berries, or fresh?

  11. Have you thought of trying paleo bread? It is grain free..it typically contains almond and/or coconut flour. You might be able to find some in the freezer section of one of the health stores near you! It's pricey at about $10.00 a loaf, but personally I like it a lot and if you're used to not eating bread, you can probably make it last awhile. Some gluten...
  12. I have been lactose intolerant since about 2010. Since giving up gluten in July of 2013, I have not seen any improvements in my sensitivity to lactose. I decided to blog my progress/results that I hope to see from giving up most dairy/all lactose. The only dairy I will eat is the casein found in my almond/rice cheese substitutes. That's it! No more chocolate...
